@Based king I did make it, and it took about 2-3 days. Never made pastry dough, so that was a pain; duxelles were relatively easy, but assembly took a minute. Followed a recipe that also suggested you split the work up into 2-3 days for that same reason. So, no need to call me a liar when you could simply call me slow and still be almost as unkind.

@@HYPERPLASMATIER Correction, prosciutto isn't shitty meat. If anything, most prosciutto is of better quality than meats you see at the deli counter or in your local butcher shop. Also, in theory you do not have to use tenderloin for Wellington, at least not beef tenderloin. I've already spoken how overpriced tenderloin is for the amount and quality, but pork tenderloin is much more managable price wise than beef tenderloin. So if you want Wellington and don't want to throw rent down the butcher shop, use pork tenderloin or some other similar cut of beef other than tenderloin.

I mean, honestly not far off, the Edwardian era is only 1901-1910; and the first home use fridge was made in 1913. Before that many homes had ice boxes, which was very literally ice in an insulated box to keep things cool. As for the plastic wrap, possibly thin waxed linen, or just pressure from weight alone, cause modern fridges are dry, but iceboxes would have had some humidity, so no need to worry about drying it out.

@@athena1491 some mould plague even food bellow 0, though much less of them. And I assume ice boxes couldn't get bellow 0c without constant ice supply. So mold was and remains a problem for even current refrigerators, except those are dry by nature so the risk is much lesser. That's why we put meat into freezers.

@@lordjaashin It just mentioned frying off the mushroom liquid, but you could add Shallots and butter during this step, extra salt and pepper as well. The steak you could use garlic, butter/thyme. Probably can't go wrong throwing garlic salt anywhere here also

I recommend 'Francesinha' it's a meat sandwich with bacon, sausage, and steak with a fried egg on top then covered in cheese and served in a bowl with chips and a special sauce made from meat oils, beer, and tomatoes. It comes from Porto, Portugal and was originally just a big oily, calorie filled warm meal for sailors that had just arrived in the city. It's very typical to find in most restaurants and cafés in northern Portugal.

It's awesome. I moved to Portugal about 2 years ago and it's literally the perfect food for a hangover, or if you just need some comfort. It's one of those 'no body makes it like my grandmother' kind of foods here.

I'm from Porto, it's delicious, but the secret is in the sauce. If you want to try another meat sandwich from Northern Portugal, easier to make but delicious as well, go for a Prego ( literally - Nail), the meat used is not a tender cut and has to be pounded with a meat hammer to soften it, hence the name.

@ManeBuki not really. There are plenty of "cold red meats" used for sandwiches. Just cuz it's cold doesn't mean it isn't cooked, it's just not well done. Take beef roast for example.

You sort of can't. The compression takes a while. unless you press it really hard, but the. The juice will spill out. What I do, is reheat it.

Alternatively, put cheese on each layer. Take it out of the fridge once its pancaked and then warm it in the oven.

Adding a layer of duck pâté or any pâté you like takes this to the next level. You can also mix some horseradish into the Dijon mustard and it really sets off the steaks.
