Hi aunty, I made these meat balls according to your recipe but using minced beef. And made the curry following this recipe. It turned fantastic. I was missing Sri Lankan style meatballs as I cant find them where I live. Now I can make my own thanks to you. :)

ISHANI URSULA GALAPPATHTHI 3-6 months usually when food is made & frozen at home. That is the European standard wisdom - try it and see for yourself. Start keeping for 1 month & keep back 2-3 meatballs to check for a few weeks more and check. And keep checking different batches for longer. It depends on the sanitation at the butcher for that batch of meat (maybe they don't have same cleanliness every day), your cleanliness when making them and also capacity of your own freezer. So it is difficult to give an answer that is right for everyone. When we cook at home we don't have sanitary standards that we use every single time like the industrial producers do. Anoma's cleanliness video is so important due to this. Meats are especially difficult because they have so MANY pathogens & bacteria in themselves to begin with and rot much faster than vegetables. They are killed and processed by different butchers who have different cleanliness practices. So meats are difficult to keep, but anyway we don't want to eat food that is years & years old or even months old. What for, when there is fresh food available in the market. We are not having a famine ;) So for our convenience, 1-3 months is more than enough in my opinion. Also food loses flavour & taste when they are in the fridge & freezer so again 1-3 months are best. I think Anoma is 100% correct - it is much better to make meatballs & sausages yourself at home because industrial producers put so many chemicals - and some use rotting meats that they can't sell as meat cuts into the sausages & cold meats. There are a lot scandals in Europe. I can keep my food longer in the freezer because my freezer has fast-freeze. Normal small freezers in the fridge can't freeze fast - they are not like industrial freezers. When food is not frozen fast (blitz-frozen) bacteria don't die and multiply much faster when we take them out of freezer. Also normal stand -alone freezers (not part of the fridge) are only meant to store previously frozen food, and NOT to FREEZE FROM FRESH inside them. So this is a huge subject. I would say in any case best to keep only for 1-3 months. Even with the fast-freeze in our double door freezer we don't keep food more than 5 months, maximum. We consume within 3 months usually. Industrially blitz frozen food can be kept for 3 years from freezing date according to international standards, but normal consumers consume the food long before the 3 year 'use/eat-by' date.
