I probably would have, after soaking the mushrooms in the BBQ sauce, baked them for a bit just so some of the sauce could caramelize. After baking, I would have topped with additional BBQ sauce if necessary.

Love this! I used to love Gaz's recipes, but I feel we've moved in different directions - he's more into fermenting and growing his own veg etc these days. I'm more into one pot meals, so I stick to his archive. Can't wait to make this again 😀

1:33 Shells always suction to the back of my throat. I prefer mini spirals or elbow... Plus shells always stick inside each other, too, and don't cook right.

My favorite way to use onions in mac and cheese (vegan or otherwise) is to dice them finely, saute them on low heat until they turn dark brown and jammy, and then add them to the sauce.

Caramelize the onion and garlic for the milk, then blend together, then brown the mushrooms with the sauce so it thickens around them. Maybe add some smoked paprika to the mac, so it connects better with the mushrooms. Love your videos!

I'm surprised you didn't say how long to bake it tho? My all-time fave vegan mac and cheese to make is by Nora Cooks and she adds melted vegan butter and smoked paprika to the breadcrumbs and it is NOICE. Def making this

As for the "greatest" vegan mac n' cheese, the whole foods Ayinde Howell mac n' yease is supposedly legendary, but supposedly the actual version he makes is super top secret, and that's the one I really wanna see someone recreate.

I cant help but feel like Mr. Gaz got some of his inspiration from O.G. Lauryn Toyota another fellow vegan youtuber. (HOT FOR FOOD) Who is the only mac and cheese ive ever seen with both miso and white pepper and the bread crumbs but hers is a much older recipe. Now I will say that it doesnt taste like mac and cheese but it is fucking delicious. Ne who with out you tasting it i looks legit cant wait to try it!!!

I don't know if you did it and didn't say or if it wouldn't work right on vegan cheese, BUT If you want your cheese and your bread crumbs to brown and toast more, do a minute or 2 on broil

This one looks a lot closer to how I used to make my dairy mac and cheese. I haven't tried either, but I have tried yogurt in vegan cheese sauces before and it made them taste tangier than real mac and cheese. My kids didn't like it and I didn't care for it as much either. If you want something closer to dairy version I think this would be it. They are probably both still really good. I want to make the oyster mushrooms with the barbecue sauce! I wish I could source them more easily where I live.

I just don't consider "vegan cheese" a valid ingredient for homemade vegan cheese. I also don't think any of those store bought shreds are any good(or healthy). My vegan Mac has no store bought cheese.

I recently found a brand that uses olive oil as its only oil and I think that’s a great improvement on the df cheese front!
