Very good analogy there, and your conclusion is almost spot on, but instead of a lowpass filter, it's rather the other way around: the shape of your mouth causes different overtones on top of the root frequency to stand out, so it's actually a bandpass filter on high frequencies that works by only resonating with more or less one specific overtone. There are several different instruments that rely heavily on overtones, including but not limited to the k'ni, the mouth fiddle, a variation of which we see in the video, the didgeridoo, the jaw harp, and several different Mongolian/Tuvan singing techniques. As another interesting piece of side info: overtones are actually the only thing that makes us capable of articulating different vowels in the first place. For instance, when you form all of the vowels one after the other with your mouth while you have a tuner nearby, you will notice that you are keeping the same pitch during all of them. Since your mouth and throat are both open all the time, the only way it's possible you are able to create a different sound must be the overtones changing with the shape of your mouth, tongue, and throat
