Methi Paratha or in Bengali মেথি পরোটা a delicious, healthy Indian flatbread packed with flavour and nutrients!
Making Paratha dough with leafy vegetables is an excellent way to include vegetables in our breakfast. In this video, I will share the trick that helps me to make ahead these Parathas or any Paratha for my busy mornings!
Did I say that I am a mom who is dealing with a fussy eater all the time?
If you are like me dealing with a fussy eater all the time, then I am sharing with you my success story that adding vegetables in the dough worked for me, now I can feed her almost all the veggies I want to feed her and when I pack these parathas for her lunchbox I don't add chillies.

Paratha:

The ingredient list for Methi Paratha:
2 cups packed fenugreek leaves
2 tbsp chopped coriander leaves
2 cups Wheat flour
1 tsp turmeric powder
½ tsp ajwain
1 tsp Anar dana powder ( ground dried Pomegranate seed)
1 tsp cumin seeds
1 tbsp grated ginger
¼ tsp Hing/ Asafoetida powder
1 tbsp oil
Salt to taste
2-3 chopped green chillies
To be very honest this Paratha won't be as soft as like freshly made parathas, but these will taste way better than your store-bought one! In the refrigerator, you can store them up to a week, and you can freeze them for a couple of months depending on the weather of your location!
Here I need to tell you one important point, make sure there is no water in the Fenugreek, or Methi leaves when you are adding them in the wheat flour Mix or make a tight dough.
Otherwise, when you leave the dough for resting time, Fenugreek leaves will release moisture and your dough will be soft, sticky and it will be difficult for you to work with it.
