Welcome to Court of Kitchen, your place for simple yet tasty food! Today, come with me as we prepare a delicious and simple Mexican Chicken and Black Bean Rice baked in one tray. RECIPE BELOW ⬇️⬇️
Let's get cooking some Mexican flavors.
INGREDIENTS:
➤ 3/4 large red bell pepper, diced
➤ 1/2 large red onion, diced
➤ 2 Tbsp cumin
➤ 2 Tbsp chili powder
➤ 1 Tbsp granulated garlic
➤ 1 Tbsp granulated onion
➤ 1 Tbsp hot smoked paprika (or regular paprika)
➤ 1 Tbsp oregano
➤ 1 Tbsp salt
➤ 1/2 Tbsp black pepper
➤ 1 can black beans, rinsed
➤ 1 cup jarred salsa
➤ Bone-in, skin-on chicken thighs 4-6 bone-in, skin-on chicken
➤ 1 cup long grain rice (e.g., Jasmine), rinsed
➤ 1 cup Mexican cheese blend
➤ Olive oil
ROADMAP:
1. Prepare Vegetables and Spice Mix:
➥ Dice 3/4 of a large red bell pepper and half a large red onion.
➥ Combine spices: cumin, chili powder, granulated garlic, granulated onion, hot smoked paprika, oregano, salt, and black pepper in a bowl.
2. Mix Vegetable and Bean Mixture:
➥ Mix diced vegetables with rinsed black beans and jarred salsa in a large bowl.
➥ Add 2 teaspoons of the prepared spice mix to the vegetable and bean mixture. Set aside.
3. Prepare Chicken Thighs:
➥ Preheat oven to 350°F (175°C).
➥ Place bone-in, skin-on chicken thighs in a separate bowl.
➥ Season chicken thighs underneath the skin with the remaining spice mix.
4. Layering in Baking Dish:
➥ Drizzle olive oil in a 9x13 inch baking dish.
➥ Spread the vegetable and bean mixture evenly on the bottom of the dish.
➥ Evenly spread rinsed Rice over the vegetable mixture.
➥ Optionally, sprinkle Mexican cheese blend over the Rice.
➥ Pour enough liquid (a combination of salsa and additional liquid if needed) to cover the Rice.
5. Baking Process:
➥ Cover the baking dish with foil and bake in the oven for 30 minutes.
➥ Uncover and continue baking for 20-30 minutes until the chicken is cooked and the Rice is tender.
➥ Remove from the oven and let the dish rest for 15-20 minutes before serving.
6. Garnishing:
➥ Serve garnished with lime wedges, sliced jalapeños (optional), chopped scallions, and fresh cilantro according to taste preferences.
