Yep the traditional foods are definitely different in each region. Love that horchata, lovely stuff! Jamaica can be refreshing in the hot sun.

About chili peppers..one name is when fresh off vine same chili dried another name. THE stuffed poblanos fresh and baked is also dried makes rich mole sauce and yes good cooks have many different dried and raw peppers. Oaxaca renown for mole sauces.

As Mexican born and American, stories like this feel my heart up with love. Mexicans really are really good people, loving and inviting. For some reason, hospitality is our specialty. It's in us, to share and to enjoy together! Food, which is often not in abundance is most enjoyed when shared with a visitor or even a stranger. American culture is totally not alike. I'm 54, recently retired U.S. Navy.. I'm also a constant traveler, I'll be spending 5 months in Mexico City, arriving in 4 weeks, July 2nd. I hope to meet a great Mexican lady and explore the city day after day. (on my small budget, jaja) If I was a certain young Englishman, I would ask a certain young Mexicana to be his travel partner. Even with electricity this preparation seems to have a few steps...Think metate made out of lava stone, mortar, pestle to grind the spices and an appreciation for the food..need a blender to make sauces and marinades. The time to make authentic fresh food you have to adore it! It isn't bland or boring .
