The restaurant we visited for this video shoot is Kouga-ryu's main branch in Amerikamura, Osaka.
Located across from Triangle Park in Amerikamura, the store is always crowded with people waiting in line.
The dough is made from yam, egg, bonito, kelp, iriko, and seven other dashi broth bases, plus yam and several other secret condiments.
The special mayonnaise is made from carefully selected Japanese sea octopus for sashimi and sushi items, topped with a special fruity blended sauce full of apples and onions, and made with only the yolk of the egg to reduce acidity.
Above all, I was overwhelmed by the lively making atmosphere created by the president and the skills of the craftsman.
