How loud is the machine ? also would suggest that machine for a small business ( 35 cups /day ) cold coffee?

Not too loud. 35 cups a day may be too much for this. Look at the Jura X8

Quick question! Are you able to control the temperature of the milk? If not what’s the default milk temp?

Taste is similar, but we prefer the new Jura Z10

Can you make a larger cup of coffee? More than just a 6-8oz at one time?

8oz is about the maximum as the brewing chamber can only hold so much coffee. Any more and it would be watered down. However you can brew twice to get a fuller cup.

Can you use chocolate milk for a cafe mocha? Or what options would you select to do that?

Likely will not work. Too thick with sugar.

Does the machine automatically adjust the frothing level based on the selected milk drink, such as more froth for a cappuccino, less for a flat white? Does the machine have 2 thermoblocks or 2 boilers to allow it to steam and brew at same time? Finally, does the grinder adjust the grind based on the drink, such as a more coarse grind for an American drip coffee versus a finer grind for an espresso-based Americano?

You can program all drinks for your liking including how much milk/ froth is dispensed. So if you would like your cappuccino to be mostly milk froth you can do that or if you prefer to have a lot of espresso and little milk froth, you have that option as well. When you program the amounts it starts to dispense and you can set the level you want (within parameters of course). There are of course defaults set in but on any of the machines I always recommend that a customer plays around with it to get it to their liking just like the temperature of the brew, how many beans are used etc. For example, if you use a robusta bean with high temperature extract and pre-brewing you may get a bitter taste so a lot of it also depends on what kinds of beans are used. The grinder has to be changed manually and isn’t automatically adjusting. Typically we recommend just leaving the grinder as it is and playing around with the other settings first. Superautomatic machines do not do filter style american coffee

Not a game changer. The Z10 is a game changer.Three hoppers to one grinder, how does that work? The lowering of the spout is silly. The only thing this machine has is the milk system. Also, the brew group is removable which is good to clean. 6 out of 10. The Z10 is a 10 out of 10. Don’t waste your money on this.

There is only one temp for milk.

Does the cup sensor prevent flow if you have forgotten to put a cup there?

That would be a great idea! But unfortunately no :( I just checked and found out the hard way. Good news is that it does just go right into the drip tray.
