Almond, Oat, Coconut or Soy. Which alternative milk is best for coffee?
Dr Adam from our Coffee Science & Education Centre compares 14 popular brands to see which varieties have the right texture, taste & stability to make great espresso coffees (like flat white, latte & cappuccino).

0:00 Introduction
0:28 Why Milk Alternatives?
1:40 Almond Milk
2:05 Why some milk varieties curdle

7:05 General Recommendations
I know this barely scratches the surface of brands & varieties on the market...apologies in advance for all those we couldn't include.
For those watching from outside Australia, many of these brands likely won't be available, however the general recommendations remain the same.

So after coming to Australia two things happened, I found out about the joys of Coffee to the point that my mates got me a formidable machine to brew my own and secondly, I found out that I am suddenly lactose intolerant after like 26 years of my life. One of the amazing Barista's at a cafe I regular (Morning Owl) recommended me to make the switch to Oat milk and it has literally changed my life. I no longer feel bloated or have the need to rush to a toilet and can finally continue to enjoy my Latte's in peace. P.S idk why but with oat milk I'm able to taste more of the coffee notes (fruity etc) as opposed to full cream.

hi great video, ive recently experimented myself with soy and almond milk in my coffee.. the soy curtled quickly when it came straight from the fridge into the hot coffee....so i tried letting the soy or almond get to room temperature, poured it in the the cup first and then poured the coffee in to the color that i like for coffee. It works pretty good, almond definatly tastes better in coffee for me! I should add that im currently experimenting with vanilla flavoring too, i put a drop or two in my two cup of water before pouring it into the coffee machine..and a touch of salt to the grounds...its quite nice

Terrific overview and study -- thank you very much for this! I'm looking forward to seeing your follow-up with health, sustainability etc. I have become a huge fan of oat milk. I can't steam it at home (no espresso maker), but I can use my Blendtec to heat and froth it with a 3 minute "hot soup" cycle. I use that to create cafe misto for myself. My go-to oat milk brand here in Canada is Elmhurst Milked Oats, Barista Edition.

At some point, as dairy was giving me some stomach issues (mild to moderate milk protein allergy, seemingly), I tasted some replacements.. Almond was drinkable but went back to milk after.. But when I tried the Oatly barista oatmilk, I genuinely started feeling it was quite a bit better than with milk. It kinda has a bit creamy vibe to me and it works to soften even a strong cup really nicely. Glad to see it "scored" well here. Definitely recommended. Oh and did try at least a few, cheaper oatmilks but they imo felt more watery and had a much "sharper" oat taste to them... So would prefer milk over a cheap oatmilk. Idk how Oatly has managed to make the often strong oat taste way less in the way of the coffee taste

I am interested in the health benefits of milk alternatives, specifically how soy milk can have a positive effect on blood sugar and insulin resistance. Especially since all milk substitutes have to be sweetened to make them somewhat palatable and stable in coffee. So many people living a keto or low sugar lifestyle these are interesting aspects to understand and consider.

8:27 - oatmilk's by far my favourite alternative, followed by soy, which i grew up drinking alongside normal whole. but i thought you should know, oatly secured and equity that has ties to deforestation, specifically in the amazon. also, almond milk may taste great, but the carbon footprint you make considering how much water is needed for just one plant that gets turned into the milk... totally not worth it. i'm all here for milk alternatives, but you should also be mindful of what you consume. otherwise, this was a fantastic video! super informative and you've a great presentation.

Interesting. Perhaps they use different acidity regulars in the recipe. We forgot to mention that we we used a lighter roast coffee in the tests, which has a higher acidity. Darker roast coffees are less likely to curdle with soy due to their lower acidity.

This is just my opinion working with these type of milk. It's funny that at our place, we used to use a lot more soy milk than almond milk. However, when Covid lock down started, the demand for Almond milk increased a lot and we ended up using more Almond than Soy. Oat is a new trendy thing that appears to get more and more popular these days as well. I tried to work with Coconut, and the smell was so beautiful, but I just lightly over heated it once and I could obviously taste the burn taste right away. So my idea is, whoever wants to drink Coconut milk should not ask the barista for the coffee to be extra hot.

Could it be people mistakenly linking soy production to new zoonosis like covid and the climate crisis (illegal fires and deforestation)? Only 6% is used to feed humans, what we need to do is cut the demand for the animals that are fed from the other ~90% and need loads of deforested space for pastures.

I'm allergic to both milk and soy, so this was fascinating. In the US we don't have many of these brands, but the overall notes are very helpful. I normally buy almond, but I'll be looking for some oatmilk or oatmilk creamer to try. I do use coconut milk a lot too in my cookiing. It would be interest if someone combined a few alternative milks to get the best aspects of each contributing to the final product. In particular, coconut, oat, and almond as a combination would probably be ideal.

@@jamesmitchell6925 I get the trifecta of hives, upper respiratory hayfever-like symptoms, and, to put it politely, gastrointestinal distress. It's a very unpleasant reaction. This is not an intolerance. It is a true allergy and was diagnosed by physicians. In the United States the most commonly diagnosed food allergy is a (bovine) milk allergy. Many children outgrow it, but quite a few don't. Unfortunately a lot of people who are allergic to milk are also allergic to soy. No one seems to know why, but the fact that the only alternative to milk for many years was soy-based may be part of it. In my case I was diagnosed with a milk allergy in my late twenties. I switched to soy as the only alternative at that time (the early 2000s) and within a year I was experiencing the same debilitating symptoms again, which turned out to be soy.

I guess coconut is the only one which doesn't have the strong "alternative" association with it. I always find some in the asia-section of my supermarket. Might be cheaper (per solved solids) than the other options - with soy and oat, ~10% solids seems to be standard, the coconut-milk often contains ~50% coconut. I guess I'll try buying some, and thinning it down with water until it has the ratio of bough soy/oat-milk.

Personally, i found that it's not actually very much about the type of milk, if you want a milk that has a similar character to cows milk in coffee. After trying bulletproof coffee and many vegan milks it was very clear to me that it's actually not at all about the type of milk and much more about the fat content of that milk. You want a milk with a fat content of about 3 percent and obviously not a milk with a very strong flavour. Personally, i found the barrista Milk from Oatly with about 3 percent fat to be a good milk substitute in coffee. Unfortunately, i also found out that it's almost impossible to make such a milk yourself, since you can't prevent the fat in the milk from splitting even with emulsifiers. The food industry only gets around this problem by homogenising the milk. This turns the very large fat particles, that would seperate from the water after a while, into very small particles that do not split (by pushing the milk through a very small nozzle with a pressure of several hundred bars).

We didn't test iced coffee specifically. However, anecdotally, Oat milk was the best tasting (in our opinion) with coffee, so I would start there.

Alternative milks with added canola oils and other ingredients make for nicer foam and taste. But, I don’t want canola oil in my coffee despite it making nice art and tasting nice. Alternative milks that are purely nuts and water tend to not make great foam but they don’t adulterate the coffee either. Have to make a trade off I guess

totally agree , regular milk is best , and get sweeter when hot , after that for coffee, you have oat milk, which is almost like milk, very neutral in taste and combines great with espresso, this is great for those who want to drink cappuchinu after meat so it's kosher parve, and for vegan it's great too because it's from plant and not cow, also oat milk is great for lactose intolerant person that wants milk, so after oat milk you have almond milk , which is not neutral but very nutty and sweet, but it's good too [probably the best for lactose intolerant person , no effect at all ], less good than oat for espresso, oat is better for coffee for sure, maybe for tea almond will be more suitable than oat, about soy milk, coconut , rice milk.... totally unacceptable result, even i would say not drinkable, soy is almost there ,almost acceptable, it's sweet , and banana/vanilla like , but the problem with soy , it's not neutral it's very strong taste and has an awful metallic/fake vanilla after-taste,if it didn't had this after taste it was acceptable too, rice and coconut a lot worst smell/taste than soy for coffee, but regular milk is so beyond oat milk that it's not comparable to the rest, it's just perfect for coffee

I agree, most soy varieties have quite a dominant flavour with the coffee. Here in Australia, it's still one of the most popular options, so the majority of cafes offer it for that reason.

@@Th3_kn4ve yes , i use steamed milk in espresso , to make cappuccino , milk is great for dark roast , as it complements it's caramely taste with it's sugars/lactose , but for drip(v60/kalita) coffee with light roast , i use oat milk , as it has taste similar to milk but without the sugars , so it doesn't cancels the light roast taste:floral/acidic , but complements it better as it's more neutral

I had Oat milk this morning for the first time ever in my flat white. It was "Minor Figures". Identical label except the caption said "barista standard" so I thought I was safe. It was awful, I just couldn't drink it. So did a youtube search for alternatives only to find in this video that Oat is as good as it gets. :( Almond next I think. Maybe Almond/Coconut blend too? This is depressing....

Oh no minor figures is what I usually avoid in cafes lol it’s very sour and almost off kind of taste. Try alternative dairy co or Califia farms oat for a less sweetened taste. Oatly for a sweeter taste. All three blend well with latte! I’ve conducted a little test myself with 9 oat-milks.
