Minapa Vada:
Minapa Vada, also known as Medu Vada, is a popular South Indian fritter made from black gram (urad dal) batter. It is known for its crispy exterior and soft, fluffy interior. These savory donuts are seasoned with spices like black pepper, cumin, and green chilies, and often include onions and curry leaves for additional flavor. Minapa Vada is typically served with coconut chutney and sambar, making it a favorite breakfast or snack option.
Ingredients:
- 1 cup urad dal (black gram)
- 1 inch piece of ginger
- 2-3 green chilies
- 1 teaspoon black pepper
- 1 teaspoon cumin seeds
- A few curry leaves
- 1 onion, finely chopped (optional)
- Salt to taste
- Oil for deep frying
Instructions:
#### 1. Soak the Urad Dal:
- Soak the urad dal in water for at least 8 hours or overnight.
#### 2. Prepare the Batter:
- Drain the soaked urad dal and grind it into a smooth paste using a mixer grinder. Add a little water if necessary.
- Transfer the batter to a bowl and add finely chopped ginger, green chilies, black pepper, cumin seeds, curry leaves, finely chopped onion (if using), and salt. Mix well.
#### 3. Shape the Vadas:
- Wet your hands and take a small portion of the batter. Shape it into a ball and then flatten it slightly to form a vada. Make a small hole in the center with your finger.
#### 4. Fry the Vadas:
- Heat oil in a deep frying pan. Once the oil is hot, carefully slide the vadas into the oil.
- Fry the vadas on medium heat, turning them occasionally, until they are golden brown and crispy on both sides.
- Remove the fried vadas and place them on a paper towel to drain excess oil.
#### 5. Serve:
- Serve the hot minapa vadas with coconut chutney or sambar.
