1:40 That's actually a strider ( a mob that walks on lava in the nether and whenever it emerges from lava it turns grey as you saw and starts dying) and you can also get a fungus on a stick and a saddle and ride them around the nether's lava oceans

5:13 That's a guardian, they are bacicly these fish creatures that live at the ocean monument and let me know if you want me to tell my lore theory but for now I'll just tell you what most players know witch is mostly that they live at ocean monuments but they can also breathe on land and they attack any players who come near

You can find that fish in an ocean monument and a bigger fish called an Elder Guardian so that blue-ish orange fish is called a Guardian

Those things are called nether striders. you can ride on them in lava if you have a saddle. Youa can stear them with warped fungi on a stick :D

This is actually an amazing idea, usually OP loot twists are boring because there's even less challenge than in vanilla, but because each click had a chance to spawn any mob in the game, with more and more multiplication, there was actual challenge and you couldn't just win without actual effort. Great video!
