Some of them are aged for a very long time and develop tertiary aromas of toffee, tobacco, caramel and walnut. The others are aged in a reductive fashion to preserve the freshness and the fruit. Thank you. I am moving to retire in Pezenas on August 1 this year. Your excellent primer course has not only given me a good overview of the wines but also commented well on the geography. Really enjoy your educational videos as I think southern France is full of gems that are largely ignored by most of the people here(most still associate French wine with burgundy, Bordeaux and rhone and may be Loire here, especially burgundy), will there be any more videos ? It’s been a year since the last one you did, thanks
