Ingredients:
To make the batter:
• 1 cup leftover rice
• 1 cup grated lauki (bottle gourd)
• 1 medium-sized onion, finely chopped
• ¼ cup coriander leaves, finely chopped
• ¼ cup curd
• ½ cup semolina
• ¼ cup gram flour
• 2 green chillies
• 1-inch ginger
• 1 tsp chilli flakes
• 1 tsp black pepper powder
• ½ tsp turmeric powder
• 1½ tsp Eno (fruit salt)
• Salt to taste
• Water as needed
For tempting:
• Oil
• Sesame seeds
• Mustard seeds
• Curry leaves
To make Coconut chutney:
• ½ cup chopped coconuts
• 1 tablespoon roasted chickpeas (Chola)
• 2 green chilies
• 1-inch piece of ginger
• Water as needed
For tempting:
• 1 tbsp oil
• 1 tsp mustard seeds
• 1 tsp sesame seeds
• 2 dried red chilli
• 4-5 curry leaves
