いろいろ屋台ラーメンの動画を拝見しましたが、製麺から自家製で調理場もとても清潔な屋台は初めてです。 ご主人は書道もかなりの達筆のようで、正に達人のような佇まいですね。 是非食してみたい一品です。

Brings me to the scene with his customer who said her husband looks forward every Thursday for "Master's ramen", and that speaks volumes quality of the food made. Customers notice when quality has dropped or changed so drastically for the worse and it's something that people who make food for money need to realize.

This an awesome display by the master. It saddens me that this process probably won't be picked up and paid forward by today's youth. This is a very labor-intensive life that they have chosen and is appreciated by all that have benefitted from their work. All the older masters' skills will probably be forgotten once they retire. I understand that that's not entirely true in all instances, but it's very true in many instances. The same has happened in the Navajo jewelry making industry, the younger generations have not taken the time or shown the interest to learn the skills necessary to keep the tradition alive.
