I'm always vary of the baking soda, some recipes suggest way too much (which for an amateur is hard to tell), some say wash off, others leave it in. It's giving me anxiety 😂

Better to rinse off after an half an hour it will still be soft People that ate food at a funeral fell sick because of the bicarb that was put in the food.

No need to rinse off just don't use to much . Use just enough for a very light coating . It helps tenderize the meat

Wash it off with water and then vinegar to neutralize the remaining alkaline present in soda bicarb...then proceed with velveting it with starch flour and other ingredients
