Do the employees get mad when u open the cases and when is the best time to go ?

Some stores are better than others. Start by asking a store employee if they will open for you or if you can open. I have had cases taken from me, put back on the pallet and told to weight for them to be stocked. Stock time changes so it varies, now is close to closing time.
