Mio papà arrivò da quella zona d'Italia (Trani) nel 1924, in fuga dal dopoguerra, portando con sé le sue tradizioni e tutta la sua bella gastronomia. Oggi, dopo 100 anni, le "straccinate a la cime di rape" (orecchiete), le "bracciole", la "foccacia barese", il "panzerotto" e tanti altri, sono cibi immancabili sulle tavole dei discendenti pugliesi, qui in Argentina. È in onore di quelle persone che se ne sono andate lasciandosi tutto alle spalle che scrivo questo commento. Questo bellissimo video mi mostra l'origine di tutte quelle prelibatezze nominate. Grazie.

Με πολλη σεβασμό υποκλίνομαι στους ανθρώπους που δουλεύουν και κρατουν την παράδοση!!!! Μου θυμίζει το φουρνο της γιαγιας στην επαρχία οταν πηγαινα διακοπες μικρη και έφτιαχνε τα παντα στον ξύλο φούρνο απο ψωμι μεχρι φαγητο!!!! Ο θεός να τους δίνει δύναμη και υγεία χαιρετισμούς από την Αθήνα Ελλάδα ❤❤❤❤

@@Ghibellino Ho trovato questa referenza in un sito che tratta del pane di Altamura (e' in Inglese, ma dice che la farina viene solo dalla zona vicino la citta' di Bari): Altamura bread is a bakery product made from durum wheat semolina, obtained from the grinding of durum wheat of the “Appulo”, “Arcangelo”, “Duilio”, and “Simeto” varieties produced in the geographical area defined in the product specification of the Consortium for the Protection of Altamuranella bread in the geographical area defined in the production disciplinary which includes the territories of the Municipalities of Altamura, Gravina in Puglia, Poggiorsini, Spinazzola and Minervino Murge in the Province of Bari.

@@cjay2 io l'ho assaggiato a matera,e fa schifo veramente. Sembra cartonato!(il giorno dopo poi,puoi usarlo come un mattone!E questo dipende dalla qualità del grano scadente. Anche le diciture di molte paste conosciute,riportano Grano Italiano..x poi scoprire che solo il 30% è italiano...😕

leaving the wood to bake in ovens after they have cooled bakes the wood and helps keep the oven dry from woody water and keeps the flues clean smart...The time tested receipes also smart...yeast eggs milk and 2 types of flours and the corn meal for dough flotation and working on the tables also smart...and that mixer old as the 1950s very efficient...great family business!

Come si fa a non amare uno spettacolo del genere? Il problema è che sto guardando il video alle 12,20 e prima delle 14 col ca**o che posso mangiare (oltretutto non queste cose). Ripeto, uno spettacolo.

Il video rispecchia la grande passione, esperienza e il duro lavoro che c'è dietro alle varie preparazioni che devono essere fatte quotidianamente rispettando la tradizione... c'è grande competizione tra i vari fornai soprattutto per le focacce che in Puglia sono l'orgoglio di ogni panificio e in ogni zona ognuno rivendica come miglior prodotto della regione... non conoscevo questo antico panificio ma se dovessi passare di lì sicuramente ci farei una capatina 🤤 quelle focacce sono sicuramente da provare

Magnifique ce reportage cela me fait penser à mon apprentissage dans la plus vieille boulangerie de France. C'est ce pain qu'il faut manger et pas celui du supermarché. Il faut que les traditions persiste. Seul chose qui manque c'est l'odeur du pain qui sort du four ❤

Sono Argentina, mía mamma, Carmela Papapietro nata nell sasso di Matera e sposata nella chiessa della Madona della Bruna, e arrivarano in Argentina nell 1947. Lei mi faceva imbastare IL pane da piccola, e cuesto video mi fá tanto emozionare. Anche sapere il cognome del fornaio Angelo Sacco, o ricordato a mío compare Francesco Sacco che con sua moglie Lucía anche di Matera, sonó venuto allá Argentina a Mar del Plata dove si trovano le sue figli. McD sells junk food for cheap by exploiting anything that it can exploit and bombarding the ppl with the power of the $ (see what happened in France), in Altamura they closed because ppl in Altamura continued to buy and eat what you can see in the video, which is 10.000 times tastier and healtier that anything McD can propose and still being cheaper. that's the reality of every town in that region, but the power of $ gives appeal to ppl following trends and fashion, so there are several McD around despite it is trash, but not in Altamura, they closed there, this is a fact and you can even find articles about it in the internet archives. capito?

Piękna historia. 600 lat piekarni w jednym miejscu. Nie mamy takiej piekarni. Mamy równie starą restaurację "Piwnica Świdnicka" działa od 1273 roku, czyli już 750 lat. Najlepszego! Dla Pana Piekarza i jego Klientów. Zjadło by się taki chlebek albo chałkę. Cudo.

Tak się robiło też na Dolnym Śląsku , lecz tam gdzie mieszkałem nie było takich starych piekarni , pozdrawiam

@@filon4you1510 W mojej mieścinie było sześć małych piekarni, nie licząc tzw. "Giganta" PSS. Każda ledwie nadążała z pieczeniem. Teraz to można pomarzyć o takim chlebie. Ludziska lecą po "chleb" do "Stonki". Zostały dwie prywatne i ledwie zipią. Najlepszego! Zdrowia!
