Dude what? I don't think they every changed it. If anything he looks way more of Asian ethnic yes, but I don't think they purposefully did it to made it to make him specifically chinese. I mean the setting is of the game is still of Asia. If you're talking about how he seems like a monk, that's a bit ignorant no offense. Monks originate both of Japanese and Chinese decent. He could have been a traveler.

It's kinda sucks seeing scorpion this way. I don't know what will become of him in this new time line. I don't think he will become the rage filled spectre that we all know and love, I think that Smoke will die in this game and that Quan chi will make Smoke the spectre

As long as Hanzo in this new timeline is free from suffering and pain caused by the deaths of his family and clan I'm actually okay with Kuai Liang being Scorpion. But who knows maybe Hanzo shows up in the story.

Since both Hanson and Frost are mentioned in the game ( though frost is only hinted at) my guess is that both brothers will die and their respective titles will be inherited by their protégés. At the very least Bi Han should die so we can get Noob to come back.
