* Recipe *
Knead bread dough .
1.Roughly mix 95g bread flour, 2g dry yeast, and 5g skim milk.
2.Add 1/4tsp (1g) salt. Add 10g sugar in a different area from where you added the salt.
3.Pour 65g water on the sugar and knead.
4.After you roll it together, add 10g room-temperature, unsalted butter and knead further.
5.After kneading it thoroughly, divide it in half, and color one with red food coloring.
6.Roll it into a ball and turn down the seam. Place it into a bowl lightly coated with vegetable oil. Wrap it in plastic, and let it rest for 50 minutes in a warm place.
Make cookie dough.
7.Add 20g sugar to 15g room-temperature, unsalted butter, and mix until it is white.
8.Add 10g egg in 2 incremental steps and mix.
9.Add 1/2 teaspoons (3g) milk and mix.
10.Sift 40g cake flour and 2 teaspoons (5g) black cocoa powder, and add it in.
11.Mix it lightly. Roll it together. Wrap in plastic it and refrigerate.
12.Prepare the bread dough (6) which has finished with its primary fermentation.
White Dough:
Make two 5g balls. Take the remaining dough and divide it into two equal halves
Red Dough:
Dive it into two equal parts, rounding them into balls and releasing any trapped gas.
Cover them with a damp cloth and let them rest for 15 minutes.
13.Combine white and red dough.
14.Stretch (11) to a thickness of 5 mm, and cut it into 5 mm wide pieces.
15.Place the cookie dough pieces over the red and white bread dough.
16.Add (15) to the lightly-oiled mold. Carry out secondary fermentation in a warm place for 30 minutes.
Don't uncover the mold.
17.Bake for 22 minutes in the oven preheated to 170 ℃.
18.After it has finished baking, place them on something like a cloth.
19. Eat up!
