Konomon! Konomon! Konomon!
I'll show you how to make the most addicting and tangy pickled daikon recipe of Naru's grandpa from the manga Barakamon by Satsuki Yoshino, Konomon! It'll leave you craving more after finishing it off, just like Handa Sensei after he finished the huge bag of konomon from Naru's grandpa. It's easy to make and only 4 ingredients!

Adjusted Ingredients:
1 kilogram (2.2 pounds) daikon
1 cup sugar
1/2 a cup sushi vinegar
1/2 a cup of light soy sauce
Optional: Whole dried cayenne peppers to taste

Recipe:
Daikon
1. Clean & peel skin of daikon
2. Cut daikon crosswise into thin round cuts, about 1/8 an inch in size
3. Cut round cuts into triangular pieces, each round piece giving you 4 triangular pieces
4. Put daikon pieces into a hanging drying net then hang it in a preferably sunny area to dehydrate the daikon around 24 hours.
Brine
Start making pickling brine about two hour before daikon pieces are done dehydrating
1. Put a cooking pot on stove top
2. Add 1/2 cup light soy sauce to pot
3. Add 1/2 a cup of sushi seasoning vinegar
4. Add 1 cup sugar
5. Mix everything together
6. Add whole dried cayenne pepper if you want spicy konomon
7. Turn stovetop on to medium heat to dissolve sugar
8. When sugar is dissolved, turn off heat then take pot off stovetop to allow brine to cool down
Pickling
1. Put dried daikon loosely in a jar
2. Add brine in jar
3. Seal jar then shake it to get brine to coat all daikon pieces
You're now done making it but need to wait two to three days for it to finish pickling; which you can dream of eating while you wait.
