According to this support document, Apple essentially down-clocks the CPU to prevent the system from shutting down if it happens to demand greater power than the AC adapter alone can provide: "If the battery is removed from a MacBook or MacBook Pro, the computer will automatically reduce the processor speed. I converted to Mac from well over 15 years of using Windows-based computers. I really enjoy using my MacBook Pro [2012 model, with the CD-ROM drive]. You can easily upgrade the RAM, and upgrade it to a solid state drive, as it has a much higher clock speed. Sure, Apple states that the maximum amount of RAM in the 13 inch Macbook Pro is 8GB, I have 16 GB in my machine and it runs very well. Core i5-3210M @ 2.5GHz in it, and it's quite speedy. :)
