@@vward4871 Bland food lover detected. In all seriousness though, MSG is a medium for glutamate, which is found in kelp (or "kombu" in Japanese). Why so afraid? Ajinomoto brand uses fermented veggies to produce it.

Nope, Vietnamese don't use MSG in pho period. I have never used MSG in pho, maybe a little bit in Bun Bo Hue, but no Pho.

Auntie thuy is so genuinely wholesome so it’s a very stark contrast from Nigel’s uncle roger character who is the purest example of a loose cannon. I like the interaction between the two. So good.

Great job Uncle Roger! Love your videos! I've seen people freeze the beef chunk a bit before slicing so it's not squirming like jello when being cut. Do you approve of that? You can slice it beforehand anyway and let it rest till room temperature as the hot soup will cook it anyway after you assemble. This is my favorite dish and I absolutely eat it at least once a week to make me go into my happy zone.

@@yogalingmassage in USA most child labor laws do NOT apply as long as the child is working for a business owned by parents…. the safety regulations requiring certain ages for certain equipment and those laws all still apply fully, but you don’t even have to pay your own child to have them washing dishes, ringing the register, making sandwiches, etc.

Not just the french who take over vietnam, but the americans who defended the french by carpet bombing vietnam with napalm and white phosphorus. It may be a cheeky joke on this video, but many southeast asian countries are deadly aware that america is not trustworthy. thats why aunty thuy couldnt laugh at it. Except when it comes to MSG. I've seen so many street food full of MSG that can make you from sick to hospitalized. Speaking as a vietnamese here, whenever you eat vietnamese street food and feel numbness from the back of your head, that mean they put a shit ton of MSG in.

I’m quite skeptical about how it actually tastes though. I’m sure it’s gonna be better than most Pho you can find in western countries but compared to authentic Pho (northen style) in Vietnam, that broth does NOT look clean at all.

Pho is actually French, the Vietnamese learned some French cooking and learned "pot au feu" and slightly changed the recipe. The name Pho sounds very similar to "Feu"

As a Thai+VN, in the Northern East of Thailand, some VN descent shop's broth has its techniques: some use pineapple+rock sugar or daikon+xxx for a sweet flavor & softened beef & clearing soup. Yes, of course, the Pho's broth has some French aspect decay of Pot-Au-Feu but this has become a fusion of classic French & Exotic East in many refined cuisines innovated & creative by Viet

The Little Viet Kitchen is my favourite place of Vietnamese food outside of Vietnam - Thuy is sooo lovely when I met her and she signed my book. We bonded over Asian parents' disapproval and free wheeling with quantities in recipes - she is absolutely adorable. Can't wait for her restaurant to open up again.
