Yeah but when you cook lobster, you drop it in hot boiling water. Not cold water that you slowly bring to boil. What's happening here is a slow and painful process for the crab. Not to mention, it's just air in their which is not a good conductor of heat and is even slower to get to a lethel temp.

Never seen this instrument used before, but that’s simply how shellfish are cooked. They’re not like beef, chicken, or pork where you can cook them and preserve the meats long after they’re killed. Generally, in order to eat shellfish, they have to be cooked alive. Otherwise, the food will go bad
