how do you make the version with onions? also can i substitute ghee for butter?

Yes you can use butter and for onion version you can thinly sliced onions and Sprinkle with little bit salt and leave for 20 minutes then squeeze extra water and spread over butter layer and rest the same process using salt onion mixture soft texture to onions so during folding and cooking no ruptures of mesemen hope you understand thanks
