But yes in Shahi dish cumin or coriander seeds are not part of garam masala as separately cumin powder, Coriander powder are used.. and yes. Love your effort to keep things as authentic

Thanks very much for posting. I had always assumed that it has kesar in it and that it why it is called zafrani garam masala.

Zaafran is a symbol of KHUSHBOO. Zafran is not a garam masala. So When I say Zafrani it means this Garam Masalah has a unique and very attractive smell like zafran. So word zafrani that is used here is as a symbol (TASHBIH). Hope I explained well

Any where where you use REGULAR GARAM MASALA. Same quantity you use in your dishes for garam masala. Special use is BIRYANI. Make sure in Subzis quantity will be less as you use in Non Veg

Dear brother you can add what ever you like, but ITS a GARAM MASALAH recipe. and poppy seeds and rose petals are not the part of Garam masalah. But again you can modify as you want.

Dear Junaid gm main convert karnay kay liay aik bohat hi Precious Scale ki zaroorat hoti hay. Also Universal standard spices kay liyay Tbsp (Tablespoon) aur (Tsp) Teaspoon hain aur Volume measument kay liyay Measuring cups hai. You can buy them easily on any general merchandise store. Once you have them then big difference will come in your cooking. its only a couple of Dollars

I know, I answered after hearing 0:58. He said in Gujarat and south indian garam masala, they use Coriander seeds. So I said "even in Punjab also same thing". Did you get my point? :)

Its Mughlai garam masala, in this recipe its not roasted. South Indian style does

@@delhi-up-karachi-khaane1225 Machine grinding the spices at very high speed produces similar heat as if roasting them. 5-10 second pulsing is a better alternative. For an authentic spice blend that dates from hundreds of years, the ingredients should be pounded using a mortar and pestle or a grinding stone and sifted and re-pounded at least twice just as our ancestors did to make Mughlai Advieh.

🤔hmm, bhaijan maine suna hai kisi mashhoor chef se ke garam masala banate waqt usse machine mei pisne se uska zaika tabdil hojata hai. Masalon ko halka bhun ke haman daste (mortar and pestle) me kuut lenna chahiye aur dardarasa hona chahiye. Baraiye karam is mozu pe kuch dalil pesh karen. Apna khyal rakhna

Dear Mazhar bhai, thank you for delivering upper suggestion by a mashhoor chef, but my analysis says that "Ground Fine" and Ground Coarse" depends upon recipe and situation. 90% Desi recipes use Fine ground spices, only few need Coarse spices. But this my analysis.

Zaafran is a symbol of KHUSHBOO. Zafran is not a garam masala. So When I say Zafrani it means this Garam Masalah has a unique and very attractive smell like zafran. So word zafrani that is used here is as a symbol (TASHBIH). Hope I explained well

Aap ko samjhaanay ke liyay pehlay garam masalah ko samjhanaa ho gaa. Garam Masala means all ingredients must be GARAM in effect. Zaafraan is not a kind of any GARAM Msala Family. LAFZ ZAAFRANI is a TASHBIH (Perfect Example). Yaani Yeh Garama Masala itnaa hi KHUSHBOO DAAR ho Gaa Jis tarah Zaafraan Ki Khushboo aik misaal hay. I don't know meri GHARHI URDU aap ki samajh main aayee ya nahi.

Mera hisab se ye mughlai garam masala nhi h isme bhut sare ingredients ki kami ha jaiesa paan ki jad khas ki jas rose petals black stone flower etc it's not mughlai garam masala
