Muhammara, Mouhammara is a delicious roasted pepper dip originated in Aleppo, Syria. This walnut and roasted red pepper mezze is very popular throughout the Mediterranean, including Turkey, especially in southeastern regions, where Arab dishes are more common in the local cuisine because of the Syrian cultural influence.

Ingredients:
• 5 large red Paprika Peppers, preferably Aleppo peppers, 500 g
• 1 - 2 hot chili peppers (optional for the heat)
• 100 g walnuts (extra for garnish), 1 cup
• 4 cloves of garlic
• 50 g breadcrumbs, ½ cup
• 2 tbsp tomato paste
• 1 tbsp chili paste (optional)
• 4 Tbsp Olive Oil, 1/3 cup
• 4 Tbsp Pomegranate Molasses
• 2 tsp chili flakes (Turkish pul biber or Aleppo pepper flakes)
• 1 tsp Salt
• 1 tsp Ground Cumin (optional)
• 1 tbsp freshly squuezed lemon juice (optional)
• Chopped parsley and sumac to garnish
Instructions:
1. Trim off the stalks and the seeds of the peppers and the chilies
2. Place the peppers, chilies and the garlic onto an oven tray and pour over 1 tbsp olive oil
3. Roast them in the oven at 230°C / 450°F or on the stove until the skins are nicely charred
4. When roasting in the oven, remove chilies and the garlic after 15 mins, keep the peppers for another 10 - 15 mins
5. Transfer the roasted peppers into a bowl, cover and let it steam for 10 mins for the skin to separate
6. Peel the skins of the garlics, peppers and chilies and remove any remaing seeds and set aside
7. Heat up a pan on medium heat and toast the walnuts for 3-4 mins until they emit a nutty aroma
8. Toast the bread crumbs for 1-2 minutes until they are slightly browned and have a toasty smell
9. Transfer the peppers, chilies and the garlic into a food processor, process for couple of seconds until blended and combined
10. Remove the pepper paste and process the walnuts for a few pulses, until they are chopped but not finely ground
11. Combine the roasted pepper mixture, walnuts and toasted bread crumbs in a large bowl
12. Add 3 tbsp olive oil, 1 tbsp chili paste, 2 tbsp tomato paste and 4 tbsp pomegranate molasses
13. Season with 2 tsp chili flakes, 1 tsp salt and 1 tsp cumin
14. Optionally add 1 tbsp lemon juice for a bit of acidity
15. Mix until all the ingredients are fully combined and you get a red colored paste
16. Serve in a plate or bowl, garnish with extra walnuts, olive oil, parsley, sumac and pomegranate molasses to taste

I can't believe that after 20 years, I have finally found out the name of the paste. When I was 14, I was invited to have dinner with a Lebanese friend and his parents. They served Muhammara along with arabien bread and vegetables, among other things. I always wondered what the dip was called. Finally, I know it now.

Muhammara is one of the dishes of Syrian appetizers and originated in the era of the Umayyad dynasty and is registered in UNESCO as a special heritage in Syria The word Muhammara comes from the red pepper paste that is called in Arabic (muhamar) (ahmar) and a few days ago it was chosen to be the best vegetarian dish

For sure it dates the Omayad periode, 4 centuries before Columbus. They already had the red pepper, tomato, chilli past that several centuries later, the ignorant Spanish brought them from the new continent to Europe.

Excellent as usual Mr. Hungry Man. In Greece we do something similar, however, without the tomato paste, cumin and molasses. It has a vibrant vermilion color. Also in Serbia they eat something similar called Avjar. Cheers🙋‍♂

An excellent recipe. Your recipe is the most comprehensive I've seen. I like the additional ingredients as one can take them out or leave them in for a more regional flavor. It looks stunning in both color, taste, and flavor profiles. By the way, you can freeze this dip if you make too much. I would probably serve it with some Zatar, Sumac, and fresh Parsley. I appreciate not having music for the most part of the video. I would strongly urge you to remove all music from intro and end too. There is a Zen quality about no music, very soothing, and relaxing especially for the ears. When you are a viewer, the ears start to become very sensitive to music after a few videos. Note: In the printed text recipe, you have a typo mistake in 'remaining seeds'.

I made your recipe and it was simply amazing! I recommend everyone to do it and try it. I even made my own pomegranate molasses instead of buying ready-made. Salam Firat, thanx for all thèse great 👍 recipes and your awesome craftsmanship. 👌 👏 👍 😍 I'm from Aleppo, however, not a great cook. Have lived almost my whole life abroad. Your dishes remind me of my grandmother 👵 who was an excellent cook like my mother. Just a little note if you allow, I find you're very keen on garlic. The muhhammara we're used to didn't have garlic....optional.

Thank you very much, I tried muhammara in Lebanese restaurant in Egypt and I didn't feel garlic in it also. Does Aleppo muhhamara recipe contains some other ingredients that are not mentioned in this video?

The recipe I’ve made by Ottolenghi omits tomato paste and pepper paste. I think it comes out less dense than your version by the look of it. Would be interesting to see how they taste in comparison. Thx for sharing your video.

I used Turkish style chili / pepper paste. It's called "biber salcasi" and available in most middle eastern or Turkish groceries.

@@mohamedajami4394 interesting. Maybe it is made differently in different countries. In tunisia, it has an acid taste and we consider cooking it enough to get rid of acidity is a main criteria for a dish success.

It's paprika peppers, you can also use red bell peppers, but the best pepper is mildly hot Aleppo peppers if you cand it.
