Mexico has one of the richest, most diverse food traditions of any country in the world. From north to south, east to west, you can find an infinite variety of delicious plates on your table.
Even with this in mind, Toluca City-two hours away from Mexico City-is not exactly the first place you think about when you think of Mexico's food culture, but that's likely about to change.
Chef Pablo Salas was born in Toluca, and is one of the first chefs to put the city's gastronomic style on the map, earning his restaurant Amaranta acclaim as one of the top five restaurants in Mexico. We visited Pablo at Amaranta for some of the best high-end versions of Mexican street food that we've ever tried. We miss you already, Toluca!

I LOVE COWS HEAD MEAT. Every other 2 weeks , my dad buys one for the whole family. I love the tongue the most.

i would have liked more footage of the guys out on the town instead of a third of the video just introing them. overall though I always enjoy chefs night out, the main guy seemed nice. dont listen to these ignorant people that are always in your comment section, keep doing what you are doing. I appreciate the look into other cultures, and i enjoy listening to other languages. keep it up munchies

Funny how Mexican poor people food has become popular chic. The growing middle class in Mexico has kept it's taste for their staple dishes but enjoy it in a more refined atmosphere. But they're still magic in a mom and pop corner taco stand.

There are definitely a lot of jealous whiny people in the comment section. Sorry but they like Mexican food. It’s popular. Why you so mad? Mexican food is bomb. Many people say it’s the best in the world. And if they don’t show your country’s food I don’t know maybe it’s not as popular? It’s just food.

For you ignorant people saying Mexican food is only tacos if you didn't have the attention span of a goldfish you would hear the chef say that his restaurant and his favorite foods are street foods and tacos are by far the most popular street food, which is why they are showing all types of tacos. It's like saying Americans only eat hamburgers.

jlopez1017d no one really means that. They’re just jealous and trying to troll. Look at all the different foods that are made in this video. It’s amazing. And people all over the world eat tacos, burritos, enchiladas, quesadillas, guacamole, nachos... all these Mexican dishes and the people complaining don’t have even 1 or 2 dishes in their country that are as popular in the world as Mexican dishes. They’re just jealous. 🤷🏽‍♂️

I love the fact that they drank Mezcal here, because the mantra in bars & restaurants is that you should NEVER drink Mescal unless it's to get drunk on the cheap. Only drink tequila. I'm glad the spirit is getting some respect.

Debe quedar claro chef que la gastronomía mexicana no es solo tacos, el pulque en que se da? La gastronomía mexiquense hay que buscarla porque no es lo que vendes.

not once did they eat a burrito you uncultured swine. also burritos are a mexican-american thing. they dont eat that in mexico. americas equivalent to the taco is the burger, and when american guys hangout they go for burgers or other convenient foods. in mexicos case dudes eat tacos

In North America, people most commonly associate Mexican dishes with Burritos and Tacos so that's why I listed them. How does that make me an uncultured swine?

FearlessP4P1 It's still weird how majority of the things they ate were variations of different tacos. In Canada, we don't just eat different variations of the same food as often like that, so it was a bit of a culture shock. Relax.

In the beginning of the video the chef said how his restaurant is inspired by Mexican street food and what is the most popular street food in Mexico? Tacos of course. That is why they showcase a lot of taco variants because his restaurant is inspired by the food street vendors sold growing up.

Yes, Mexico has very rich culinary culture and gastronomy, but there are plenty of other countries that do too in the world. I wanna know about those other countries.
