Samin Nosrat-author of Salt, Fat, Acid, Heat and host of the new Netflix show of the same name-stopped by the MUNCHIES Test Kitchen to show us how to make the best tuna sandwich ever.
She goes all out, making her own version of canned tuna, with the confit method, and teaches us the French style of building the perfect sandwich.
She also shows us how to make homemade mayonnaise, and even how to fix a "broken" mayonnaise. If you're normally a tuna sandwich hater, this is the one that will turn you into a believer.

Made this yesterday and from my tiny Seattle "dining room" I was transported to the south of France. It was a transcendental experience. Yes, fresh tuna is really expensive. Yes, 2 cups of extra virgin olive oil is a lot. Yes, if you are in US then only expensive grocery stores sell fresh olives. -- But sometimes it's okay to treat yourself and show your company how much you love them.

Yeah great tip and around the time i watched this vid I had also watched Carla from Bon Appetit's vid on Shrimp Scampi discussing same concept of adding water to fix a sauce that broke (as Samin did here in the intro via ice cube), that Carla said she learned as a line cook as one of their many tricks.

This is an old trick. But it can water down the emulsion, and if you're not too careful, it breaks the oil even more. After so much inconsistency, I gave up on the ice trick. I now stick my glass or metal bowl in the freezer for 10 min before starting. You also want to make sure the base you're adding oil to (ex. milk, eggs, garlic puree, etc) is also cold. Bc I'm plant-based, I usually have to make my own mayo, ranch, aoli, & toum at home. When I don't have time to prep a cold bowl, then I just use a food processor or blender and stream the oil in slow. And if SHTF, I can always save it with an emulsifier or thickener (ex. flax, chia, konjac, psyllium, or xanthum gum, etc). I mean cooking doesn't need to be a scientific endeavor, but sometimes it helps to understand the chemistry & utility of different ingredients ☺️

Just made this. Took a bite, and I'm sitting here staring at it, trying to convince myself I actually made something so delicious. I don't even like sandwiches that much, but I would happily eat this everyday. I used Japanese Kewpie mayo, which is already delicious, and added some squirts of lemon and some of the tuna oil to make it more luxurious. And even though my tuna was SLIGHTLY overdone, it all came together and I didn't even notice.

Although I would probably never do everything from scratch as she does, just the construction with quality off the shelf ingredients sounds great. Hellman's, a good tuna in oil with fresh veggies, and the tapenade.....totally doable. Great video.

Hellman's is trash. You can still make good homemade mayo with a stick blender or in a NutriBullet type appliance. It's cheap, really easy and tastes so much better than American store bought mayo. Americans ruined mayo, which is an elegant French sauce.

I tried recreating this recipe with good results. I made one addition which boosted the quality of the sandwich. I added some roasted sweet peppers in oil. The texture of the peppers is fatty and there taste is sweet. I think they make a good addition and are consistent with Samin's food philosophy.

I dearly loved the Salt Fat Acid Heat Netflix show!!! I've watched it several times and learn something new each viewing. So far, I don't care for most confit dishes because the oil lingers too much. This tuna may be the one exception where it is appropriate so I'll try it. Thanks Chef Samin!!

It makes me very happy to see Samin in my favorite KZfaq channel. Love her and her series and just started to read her book. I was thinking about asking for some Persian recipes, but I know they are not easy to make, and if this is the amount of work she puts into a tuna sandwich, I don't even want to imagine the amount of energy her Persian dishes might take! That cookbook was one of the best cookbooks I have ever read. She has this style of TEACHING you how to cook, instead of just listing a bunch of recipes. You get to go on a little journey. It is also illustrated well. And if you get the hardcover - also get it in digital format because there are links and references back and forth to the relevant pages in the book. I have it open on my tablet when I read it in the kitchen.

I was first introduced to Samin in BA s test kitchen videos when she made bread with brad. I love her so much she’s the best. Has a great personality and really good tips much love I wish her the best with her books and Netflix

I have so many cookbooks by lots of cooks and from many restaurants but her book is the only one I've been able to actually read from front to back. No joke, every sentence in the book has value.

We made this for Valentine’s Day and it was fantastic! I couldn’t find the exact olives, but everything else was as directed. Couldn’t stop raving about how delicious it was.

This woman is fabulous! Can't wait to try this recipe. Beyond that, she peppered her dialogue with some great hints and tips as she worked. Cooking the tuna in olive oil is something I will try.
