STEP BY STEP EXPLANATION:
Cow milk is standardized to a fat level of 4.5 to 5.0 per cent using fresh cow cream.To this milk calcium chloride is added at the rate of 0.05 to 0.10 per cent. The milk is heated to 90*C without holding. Thereafter, the temperature of milk is brought down to 85*C and coagulated at this temperature using 2 per cent citric acid solution.The citric acid solution is heated to 85*C prior to its addition to milk. And after that solution is left for 5mins and after all lumps of paneer has settled down it is drained through a visking cloth .After that its transferred to a pneumatic press which drains all the solution present in the paneer and after than panner is ready to be packaged after convenient cooling.

use full fat milk and let the milk curdle fully ....also milk should be boiling when you add adequate amount of lemon/vinegar/curd..don't drain the paneer water immediately let it rest for sometime before draining..from 1ltr milk you should get apprx 200 gm paneer

Forget just hand gloves - they need proper uniform including shoes. They are wearing outside shoes to a place where they are prepping dairy products. Also they need to not drag the crates across the floor.

I don't think they use vinegar. In bulk they normally use citric acid dissolved in water. And amount of citric acid depends on pH of the milk. At home make a solution with 1 tsp citric acid and 4 Tbsp water ratio. And spoon by spoon with an eye on the milk

jonah Meiphok The floor looks like a red ceramic tile like you would find here in the states. Easy to sanitize but slippery when wet.
