Greetings from Greece! Usually we cook stuffed peppers without minced meat, using only rice and herbs. The minced meat is just an alternative. I would say that the vegan edition (without minced meat) is the original one and definitely more famous. The herbs are everything in this dish, as in most of the dishes together with spices. So make sure you buy fresh and alive herbs!

Most wonderful words... "My vegan dad". My parents just aren't and weren't as open to change as yours. Big up your dad!

I just love to see such a good relationship with a father and son. Cooking outside also makes everything better, and in this time of divisiveness between many people, even within families, this is not only a way to learn more delicious vegan recipes, but it is also a model of support, and love in a family.

When i was a child, my mother often made this recipe with meat. I am so happy you give me a vegan version of this delicious meal. Greatings from Germany!

Alright!! I made these! The sauce is excellent and could be used over pasta, maybe like a Raghu. It’s a little acid forward because of the lemon, so be mindful of that when you’re cooking them. However, when the rice and sweet potato are added, it does round out the acid forward profile, and makes it more balanced. I personally did NOT add the lemon zest, and it was very good. Adding the vegan yogurt was a great addition to make this a wonderfully balanced taste. I will def make this again!! Also, it made a bit more filling, and I froze it. So good! I hope everyone tries this!! To add: I processed the sweet potato in the food processor and sort of blanched them with some salt. I also added brown rice instead of white rice, because I had it. The addition of the balsamic vinegar was surprisingly lovely!! I just can’t say enough positive things about this dish!!

My parents don’t understand vegan diets no matter how much I explain it to them. Channels like yours help me show them how being vegan is as nutritive if not more and can be as tasty as an omnivore diet. But the fact that your dad makes his own channel is even more helpful to introduce vegan kitchen to other dads and families skeptical about it. Thank you to both of you for this labour. Dude, just before you said that your father was going to open a channel I was going to comment that we *needed* him on the platform. I can't wait to try this recipe: we havesoeting quite similar where I am from (the south of Italy), and also have a version where we stuff eggplants (which is amazing!). I can't wait to try this recipe and share it with my family: I am the only vegan person in my whole extended family and have had to learn to cook from scratch nice flavourful recipes, to avoid having my parents comment on "how bland vegan food is"
