So this is what goes on behind-the-scenes at the bakeries here in Paris, where even a small, family-owned bakery makes at least 800 baguettes a day!! Not to mention the 4am morning shifts... Culinary school might have shown me the ropes, but this BTS tour really showed me the sheer amount of work that goes into the art of bread-making. I am in awe.
Thank you to La Boulangerie Du Square, Frances and Christian for accommodating me! And thank you to Chef Eric for making this very spontaneous, and very special tour possible!! Highly highly recommend checking out the bakery if you're in Paris.

I would love to know if you think culinary school is worth it as a “break” from my full time job? Is it expensive? I love cooking but I feel really confined because I live alone and can’t eat that much so have to scale everything down, but I’d love to experiment more and learn with other people.

It is pretty expensive. I'd suggest looking at your local community colleges. A lot of times they offer cooking or baking classes for a more affordable price and teach skills for home cooking. Source: I went to culinary school in France and US.
