Maybe its just me but the quick cuts after every sentence drive me crazy. I think i'd prefer longer segments, even if they're only 30 seconds. a cut every time he finishes a sentence is just too much.

Easier said than done. A lot of the time there is a cut because there is a long pause. You CAN leave the long pause but it'll likely get annoying and cause people to click off so sometimes to provide the context needed, and keep a decent flow, this happens. There are situations where leaving a gap is better though, you are correct. I try to space the cuts if possible where I can so it's not jarring, but can't always.
