Actually I think in this case when he suddenly tries to breath and doesn't get any air he should get a rush of epinephrine and norepinephrine (adrenaline and noradrenaline) but there are a lot of factors and some people can hold their breaths for upwards of 15 minutes without breaking a sweat.
