Happy to see you all enjoy Filipino food. I just remembered when we had a boodle fight meal in a 12 foot table, was truly a fight that it was finished in just 5 minutes. We were about 20 doing a military training for officers and had this boodle fight, nobody even had a chance to sit down, all you can see are our hands grabbing the food. The officer in charge got surprised and told he did not even notice it was finished already, it was just like a storm that passed by.

Since you were asking about the pomelo: Pomelo is different from the grapefruit. Pomelo is actually the principal ancestor of the grapefruit. Grapefruits are more sour/bitter which is why people usually eat them with a little sugar sprinkled on it. Pomelos are much sweeter and larger. Locally, we also also refer to the pomelo as "suha".

In 2 to 3 days it could become vinegar already. In the provinces they add powdered red bark from mangroves. So it becomeqs reddish or orange in color.
