Meatloaf -
2 eggs, 2/3 cup of milk, 2 tsp. salt, 1/4 tsp. pepper, 3 slices of day old bread crumbled, (or if you're in a hurry, I just use breadcrumbs ), 1/2 of an onion chopped, 1/4 cup shredded carrots, 1 cup shredded cheddar cheese, 1 1/2 pounds of ground beef, a quarter cup of ketchup, a quarter cup of brown sugar, 1 tablespoon of yellow mustard. Beat eggs with milk, add salt, pepper, and bread and mix until the bread absorbs the milk. Add onion, carrots, cheese, and meat. Stir until well combined. Place in a loaf pan. In a small bowl, Mix ketchup, brown sugar, and mustard and spread over the top of the loaf. Bake at 3:50° for one hour and a half.
