Have I learned anything after several years of "studying" Italian food with Eva? In today's video, she challenged me to cook three classic Italian dishes: fettuccine all'Alfredo, pollo alla cacciatora, and tiramisù. The only catch? I'm not allowed to use ANY recipes.

I'm curious how many of you cook without following recipes? I've always been so dependent on them on the rare occasions when I cook... this really pushed me out of my comfort zone!

All the time Recipes are only guidelines not a roadmap for cooking all of the dishes. Dont get me wrong some recipes have to be followed to a tee Others leave a lot of room for improvisation

I couldn't make tiramisu or Pollo alla cacciatora without a recipe, but I routinely make various fresh pasta dishes, including fettucine burro e parmigiano and ravioli, pestos, carbonara, and a few others without measurements or recipes, except I almost always measure the pasta water and salt. On the other hand, I have no idea how to make coffee.

Io perche' a forza di guardare mia madre da piccolo(e aiutarla pure😊) mi sono abituato ad andare a occhio,il fatto e' piu' semplice quando conosci gli ingredienti cosi' non vale per i dolci che ESIGONO quantita' precise,per questo Harper hai fatto un gran bel tiramisu' a quanto pare!🤩😋👍

I almost never cook from a recipe, unless I’m trying something unfamiliar to me for the first time, or often for baking. And my husband and my son also cook the same way, although my husband bakes bread regularly without a recipe, just by feel-I wouldn’t dare, but he’s been baking bread all his life. So we’re lucky enough to eat mainly fresh, home baked bread.

Yea please do this, it would be hilarious 😂 But I think Harper actually speaks a good Italian, so to make things more spicy the instructions should be all in stretto dialetto calabrese. We Italians would be on the floor laughing in tears all the episode.

@@MrGilRoland mmh, non credo che parli un buon italiano. Forse conosce parecchi termini che si usano in cucina, ma non sapeva il significato letterale di "pelo nell'uovo". Secondo me sarebbe complicato anche in italiano 😂

Haaa... Tiramisu ❤ As here (Philippines) it is very hard to get savoiardi and mascarpone is outrageously expensive, I solved the issue by baking my own savoiardi and do homemade mascarpone ! And guess what ? It's the most tasty and yummy tiramisu I have ever done 🤤😎

That's nice, it's not that difficult to make savoiardi, also in italy some people cook them but most of us just buy it because it's faster. The mascarpone is harder to make but you did a great job, if it's too expencive. Good job :D

This is how you cook: the consistency, the smell, the taste, the texture...recipes are good the first few times that you make a dish but then you make it your way.

I cook without recipes. It’s taken me a couple of years to learn how to cook following a recipe. I usually find that following a recipe doesn’t come out as good as my cooking without a recipe. Great job, Harper!!! 🎉

I love Eva's gestures with her hands, with or without a fork, making little circles in the air. You know the dish has her approval. Good job Harper. But most importantly, you've given me confidence to cook Italian.

I think the best thing about this trial was that Eva was the winner in thia whole thing to know that her husband really proud of her cooking and knows the taste, smell, and things she does throughout the process. Yet the biggest thing behind it is that, it was made by you Harper. Bravo!!!

Fantastic episode. Eva is right. Savory foods can easily be made by feel. Desserts are more of a science. All professional bakers will weigh ingredients to be more accurate. Many times the temperature of the ingredients matter. The order you add the ingredients matter a great deal too. That tiramisu really proves you learned how to cook. Eva’s smile when she tasted it confirms it. I will love this series. I learn a lot. Not only cooking but history. I also love seeing the love and respect you show for each other. ❤️

The look on Harper's face throughout this whole ordeal is the same one my husband had on his face every time we had a kid. (3x) I'm happy for him that the stress ended with what looked like a really awesome dinner😊

When I hand cut pasta, I roll or fold one side half way up, then roll the other side up to meet in the middle like a Torah scroll. Then, after I cut it, I can slide a skewer or a thin knife under the center of the scroll, lift, and the pasta unrolls. Much simpler than trying to flip it around to get it to unroll.

Great job, Harper👍 the happy face of Eva says it all ❤️ what a lovely couple you are... and all the lovely food you prepare. I'd have loved to eat all three of your dishes, Harper and with a big grin on my face while poking my cheek with my finger. 🙋🏻‍♀️ The way I learnt cooking was by watching and helping mom and granny. There were no recipes in my family. It was always a handful of this, a good amount of that or just a pinch or a splash of something. Both mom and granny taught me to use my senses and trust them. I could see, smell, taste, feel and sometimes even hear when it was right (or not yet right). Today, in many countries cooking is just opening cans, jars, packages and topping stuff with a ton of artificial seasoning. That's very sad, it takes away so much of the passion, the love for food and good flavours, the satisfaction of really creating something that makes oneself and family and friends happy. Of course, people are busy but so were my mom and my grandma who lived in a time without many of the modern appliances and little helpers, plus doing the gardening, growing veggies and fruit, canning and conserving stuff, doing laundry, working a part time job and trying to raise us kids to what they called "decent people"😂. So, time isn't a point for not cooking good food for me. It doesn't necessarily take so much time to cook something yummy. Besides, cooking when done with passion and joy, helps you relax after a stress day at work. Have a glass of wine while you are at it and you'll end up smiling while plating your meal. ❤️Happy cooking everyone 🙋🏻‍♀️

This was so much fun! As for me, my entire life growing up I never really saw my mom, my Nanna or Great Gramma ever measure a darn thing; it was always by feel and sight. I immediatly put a thumb up for the Harper's tiramisù, excellent job bro! I learned how to prepare a tiramisù when I was a child from my zia Maria (I have a zia Maria too...😋) and now that I'm 43, I always always always follow her recipe wrote with the exact amount of ingredients that fit exactly in the same pan that I use for tiramisù for decades...Great!!! 😄🥰👍👍👍

The _caffettiera_ with the hole on the lid; that is a Brikka. Making espresso with it is such a treat since you get this thick crema on top of your espresso, just like at a proper cafe.

If you make these recipes all the time its not to hard to remember, when your young, you get older and its a rare dish,I found I can write it down for the times the memory fails me. But not all of us love to cook. everyday. I dont have a choice. its cook or dont eat. why I love the simple recipes. 5 or less, not included oil and salt/pepper. Love this food. So glad i found this channel even if it was 2 or 3 year too late...
