@@liamness Nah, when you're going that slow, there's nothing to worry about as long as whatever you're cutting lies flat on the board. He even stopped when he got to the last one because he didn't have room for a proper grip. It would be more worrying if he was trying to cut the whole onion in half, or cut a radish or carrot in half across the diameter.

I guess it's not that necessary. In my experience the wine helps get rid of the porks smell. But the powerful Jang in this case would mask the pork anyway. Sometimes if we don't have wine we just use soda or do a quick rinse with salt

5 lbs Pork Belly 1 onion, sliced 4 green onions, diced 1 tblsp minced garlic Mix together: 1 cup gochujang (Korean chili paste) 2/3 cup sugar or any sweetener 2/3 cup soy sauce 2/3 cup chili powder 1/3 cup sesame oil 1/3 cup cooking wine (optional) Massage sauce into meat, onions, and garlic with gloved hands. Mix well. Refrigerate for 1 hour.

In case anyone's wondering about the actual stir-frying part; put everything in a deep & wide pan, and cook'em in MEDIUM heat, stirring the whole thing up every now and then for overall consistency. Serve it in a dish when you see a little blackening on the meat. Should you use relatively fatty meat like how Mama Cho did with pork belly, hot oil could be splattering out of the pan if you heat the pan up too much. 너무 맛있는 정석 레시피 잘봤어요 어머님 ㅎㅎ

Cooking wine adds acidity and also helps extracting aromatic compounds that are soluble in alchool

The cooking wine used in the video is almost definitely mirim (or mirin if you're Japanese), which doesn't provide acidity. If anything, it has a bit of a natural sweetness to it. That said, it does indeed help extract aromatic compounds, and it's mainly used for that property, like Sungwon's mom said. It has a dual purpose of removing smelly meat smells and also bringing out more flavor by making the dish more aromatic. That said, even if you just used whatever dry red or white cooking wine you had, the dish would probably turn out great. Maybe not red though. A dry sherry would probably work fine.

​@Chillaxorita Not to troll, but I want to ask if perhaps you meant it provides "sweetness" as opposed to "sourness" ? Mirim is mildly acidic (and parts sweetness, yes) so it reads oddly to me that you contrast acidity with sweetness.

@@Chillaxorita mirin is mildly acidic with a pH around 4.0, so I stand by what I wrote. when you marinade and cook with it you do it for the tenderizing effect it has on meat, and to help developing the spices’ flavors, not much for adding sweetness to the sauce. For that there’s sugar or fruit

The collabs with your mom are so charming because she doesn't have KZfaqr workflow. I'm not a real KZfaqr but whenever I record myself, I do multiple takes constantly because my tongue tripped or I just don't like the way I said something, and I know actual KZfaqrs do that even more. So seeing her (relatively) unedited cooking process is so refreshing. It's fun to watch a skilled video artist and a skilled cook blend their skills like this!

As someone who's cooked since I was 10, cutting my onions perfectly is never something I stress over--let alone while you're still learning about the basics! I'd focus on cooking temperature, flavor, and avoiding food-borne illness. I love these videos, and definitely feel like your mom knows her way around the kitchen 👩‍🍳 Some cooks like to be precise and craft that perfect meal, but others know to go for good enough, especially if you're just trying to a meal on the table. I think cooking is just about giving it a good shot, having something to eat, and cooking with mama cho 😋
