Sauces are important in my cooking, and I use them to create distinct characteristics of a dish. In this video, I will describe the top ten sauces that I use in my dishes. They form a panel of seasoning ingredients that I have at my disposal to create flavors that I enjoy and love. When I combine them with herbs and spices, I have a large repertoire of seasoning agents to choose from. I am always looking for new seasonings to enhance and create flavors for my dishes.

My top sauces for Asian cooking are: Light soy sauce, rice vinegar, seasoned rice vinegar (not dark rice vinegar), Mirim (low alcohol Japanese rice wine), Oyster sauce, Hoisin sauce, fish sauce (not cloudy), Sriracha, I tend to use fresh limes instead of lemon juice and I fully agree with you on the sesame oil. I only use very little sesame oil for my stir fry's only. It was cool to see what you use most. Thanks for sharing this video and cheers.

This is very interesting. My favourite among those is light rice wine vinegar -- what a wonderful, bright sort of taste! My personal favourite, though, in a more general sense, is Worcestershire sauce.

How do I pick a premium Rice Wine? There is a lot of info online regarding this that just makes it more confusing. I've seen 4 main chaoices from dry to sweet. What do you like? Thanks!

Do you need a certain btu for wok cooking? Isnt 12,000 to low?

If you seek new taste then you need more dragons breath in your dishes and you cant achieve that high heat cooking on your indoor stove it won’t get hot enough and what about Shaoxing wine ? I use that a lot

Lee Kum Kee is one of the worst brands to recommend. They are the Heinz Tomato Ketchup of Cantonese cooking. Two types of soy sauce? Garbage. There are many more. I have seven in my kitchen. And I don't mean different brands.

You are probably be right about that. I have friends told me the same thing. My feeling is that it is convenient for people who just starting to cook. It provides a shortcut. Once they become more accustomed to how to flavor the dishes they can start using different seasonings directly. I have a masala daba that I use most often for my seasonings. Do you have any other sauces that you would like to recommend? Would love to hear your suggestions. Thank you for your comments.
