INGREDIENTS:
For Liquid Glucose:
* Sugar (चीनी) - 4 tbsp
* Water (पानी) - 2 tbsp
* Lemon slice (नींबू का टुकड़ा) - 1 small
For Barfi:
* Sprouted wheat (अंकुरित गेहूं) - 1 cup
* Curd (दही) - 2 spoon
* Milk (दूध) - 1.5 litre
* Vinegar (सिरका) - 1 small spoon
* Water (पानी)
* Jaggery sugar/Desi Khand (गुड़ की चीनी/देसी खांड) - 150 gram
* Liquid glucose (लिक्विड ग्लूकोस) - 2-3 tbsp
* Ghee (घी) - 3 tbsp
* Cardamom powder (इलायची पाउडर) - 1/2 tsp
* Grated Coconut (नारियल) - 1/4 cup
* Cocoa powder (कोको पाउडर) - 1 tbsp
* Red food colour (रेड फ़ूड कलर) - some
* Cashew nuts (काजू) - 2-3 tbsp
* Almonds (बादाम) - some
* Pistachios (पिस्ता) - some
RECIPE:
Take some Wheat, soak it for a day then make sprouts of it in 1-2 days.
Grind the Sprouted Wheat coarsely & take it out then put some Curd in it.
Take a big pan, put ground Wheat & Curd in it. Then put Milk & cook it. Put Vinegar & Water mixture in it & cook it on medium flame.
Then put Jaggery Sugar in it. Make Liquid Glucose with Sugar, Water & a Lemon Slice by cooking it & making it thick. Then put the Liquid Syrup, Ghee, Cardamom Powder, Grated Coconut, finely chopped Cashew Nuts in Milk. Then take some Cocoa Powder, Red Food Colour & Water. Mix them & put them in Milk. Put some more Ghee in it.
Make it dry & put the mixture in a greased tray. Garnish it with Grated Coconut, Cashew Nuts, Almonds & Pistachios. Keep it to set for 1-2 hours & cut it in pieces. Enjoy the Tasty Halwai Style Dodha Barfi at home.
