NATURAL LEAVEN. Easy and always successful way to make strong rye yeast. While it is summer, do not leave it in the oven for many hours, I am waiting for a light bulb. In summer do not turn on the light during the day, only at night, just before going to bed, turn ON ONLY the light, without the temperature, for 3-4 hours, turn off the light and go to sleep. So you will do all the following days. When it is hot and without our help the yeast will become fine. Temperature for rye yeast is 28 - 30 degrees. Good luck!
To prepare a good yeast it is better to take wholemeal rye flour because it has a higher action than plain flour, cleaned of bran and most of the grain. Whole is more nutritious and has slow carbohydrates, such flour is more active, microorganisms "eat" at a slow rate and the resistance of such a crop (yeast) is greater, what we want !!!

If you are thinking of baking a homemade, healthy bread that you keep for longer, then you need to learn the process --- how to make rye yeast. It may seem difficult, but it is not. It takes patience and experience. I have looked at the German and Russian KZfaq channels, I have made the yeast 3 times in different ways. The easiest way for me is this…. and in this way you become the strongest and strongest yeast.
* 1 day * 25 gr. rye flour and 25 gr. water
I start at night, 10 a.m. to 11 p.m.
First we weigh 25 grams of water and 25 grams of flour and mix. The water from the filter must not be boiled. Close the lid slightly and put it in a warm place for a day. I leave it in the oven with the light on. The temperature should not be above 28 degrees.
In the beginning, there will be no reactions in the jar, and if we smell the contents, we will smell the rye flour.
* 2 days * 25 gr. rye flour and 25 gr. water
Exactly 24 hours later, we start feeding our yeast. He is alive and hungry. We need to add 25 grams of rye flour and 25 grams of water to the jar. Mix well and put in a warm place.
* 3 days * 25 gr. yeast 25 gr. rye flour and 25 gr. water
After 24 hours, small air bubbles begin to form. At this point, its smell changes to intensely sour.
On the third day, feed the yeast again. But now we only need 25 gr. contents of the jar. We throw away the rest, to make it louder. Transfer all the contents to a plate, weigh and add 25 grams of water and 25 grams of flour. Mix well, close the lid and place the jar in a warm place.
* 4 days * 25 gr. yeast 25 gr. rye flour and 25 gr. water
On the fourth day, we must weigh 25 g again. of yeast and add 25 grams of flour and 25 grams of water. Close and place in a warm place.
Last day
* 5 days * 25 gr. yeast 25 gr. rye flour and 25 gr. water
On the fifth day, we repeat the feeding process. Weigh again the 25 gr. of yeast, 25 grams of flour and 25 grams of water. Close the lid. I put a rubber band to understand how much it swelled and we place it in a warm place for 12 hours…. because tomorrow our yeast will be ready. You can also leave it in the winter radiator and have it covered.
* 6 days * 25 gr. rye flour and 25 gr. water
On the sixth day, after 12 hours --- at 10 or 11 in the morning it doubled, but it went down, so it needs feeding…. Add 25 gr. rye flour and 25 gr. water. Put a rubber band and place in a warm place for 4-6 hours.
After 6 hours our yeast doubled and not only… it has air bubbles, its smell has become pleasant…. There is growth and life in there, so it is ready to make our dough for wonderful, healthy bread.
If the yeast will reach a peak in 6-8 hours, then it is ready for baking the first bread!
