So the filling is composed of shredded taro , carrots , green onions or garlic chives, minced pork, red onions, black mushrooms( actually a fungus , adds crunch and very nutritious), garlic. This is a versatile mixture , it can be filling for eggrolls, spring rolls using rice paper and fried. Taro is crucial because it absorbes the moisture from the ingredients keeping the final product crispy longer even when it has turned cold. I guarantee it is truly delicious because I've made it myself. I haven't veered from this recipe as it is a winner and will not fail you. For seasoning , I use fish sauce, white pepper, sugar, oyster sauce. For dipping sauce , I favor vietnamese nouc cham, & with some heat, a few dash of Sriracha. Anybody can do this as the ingredients are widely available in America. I am encouraged by the interest in Asian cuisine. Maybe sharing food could help bridge the divide among races ?
