1 nautical mile (nm) = 1/5400 x shortest distance from equator to north/south pole
1 nautical mile (nm) = 1852 meters.

I've watched about 20 explanation videos on this subject, and I'm still struggling to understand it. Is a nautical mile nearer to the pole the same as near the equator? If not, why do we use as it's inconsistent ?

It's derived from the distance between two minutes of latitude, but has been standardised to be exactly 1,852m
