Neer Dosa is a typical traditional dish from Mangalore. It is a special type of crepe or Dosa made from rice batter with the addition of grated coconut.(Optional).This Dosa does not need any fermentation and can be made instantly.
these soft fluffy dosas are easy and tasty too and can be enjoyed with coconut chutney.The ingredients are
Raw rice 1 cup
Fresh grated coconut(optiional) 1/2 cup
Salt

Hello Geetha. I certainly appreciate the way you are sharing so many tips and recipes on you tube, precise and easy to comprehend. Please bear with me for I would like to share a thing or two about how we go about making neer dose. We use ordinary dosa rice and not cooking rice like some masoori. Idli rice also is not used. It is better to let a ladleful batter to stay at the bottom as the batter is never ultra smooth in a mixer. Smoother the batter softer the dose. It is best to use a cast iron flat dosa tava rather than a non stick tava. You can get a shiny smooth and soft dose. This one is for a nice display- fold the dose top side out showing the smoother side. Finally, we make kaayi suLi- grated coconut and jaggery to go with it. Another side dish is mango rasaayana, havyaka style. This is an every day dish but yet, we also make it for guests and newly married couples. Thanks for reading this. Sumathi Ramachandra

Could you also pls write the exact measurements of water to be added? Tried various amounts, got the buttermilk like consistency (or so I thought) used a well seasoned hot iron tava and yet the dose breaks! It is same as heart break to see that my most favourite comfort food is always a fail when I try to make.

@@abcdefg13305 Hi. Regarding your query about how much water to add so that dosa doesn’t break - It is not so much about how thin your batter is than how hot your tawa is. 1. Use a flat tawa with a smooth surface. Smear a thin layer of gingelly or refined oil. Do not use coconut oil or ghee. 2. Heat the tawa till it is quite hot. Smear a little oil again. Make a small dosa till you get a hang of it. 3. Cover the tawa immediately. This is important. Keep the flame medium now. Remove the lid after half a minute, remove the dosa. 4. Smooth batter makes nice dosas. Add two tablespoons of grated coconut while grinding. This gives a nice flavour and the oil content makes it easier to lift the dosa. 5. Always keep the flame sufficiently high and adjust after spreading the batter and covering. 6. Splashing the batter on the tawa makes thin dosas. I use cast iron kaavali(tawa). Regards, Sumathi
@SMATHIBHAT
@SMATHIBHAT 2 жыл бұрын
@@abcdefg13305 I forgot to mention - don’t lift the dosa soon after removing the lid. Wait for may be 15 to 20 seconds. Dip the sattuga (flat ladle) In cold water to prevent it from sticking to the dosa.
