@@NeevesKnives I'm a butcher and I'm looking to purchase a new knife for opening the cryovac packages the meat comes in, have you got any suggestions? im tired of dulling my boning knives at work, I'm also trying to keep budget in mind. thanks

@@jasonanderson7020 your going to want something in a stainless steel, but still make sure to keep it clean and oiled, steels you wouldn't ever worry about would be lc200n or vanax, but I'd recommend something in 14c28n possibly from civivi, I'm not sure the size of blade your looking for but civivi has great quality also there blades in Nitro v would work well, or even the civivi pintail in s35vn, the civivi brazen drop point in 14c28n, the civivi riffle in 14c28n, you can also get the civivi elementum in s35vn, that model also comes in d2 if your really on a tight budget but make sure it's coated as d2 is not stainless. Check some of those models out the pintail and elementum are small to medium size the other 2 are full size

Well done man. I use to use the Norton tri system but took way to long. We process beef during winter and doing 20 knives every 2 days on wet stones take to long. I got the Ken onion work sharp and love it. Use 3-4 different belts and then leather at the end works fantastic.

Good video bro. I like watching your sharpening videos. I've gotten much better at freehand because of you. I bought a Falkniven DC4 to throw in my camping pack for field sharpening. I'm not thrilled with the Worksharp field sharpener because of the angle guides get in my way. The actual stones are fine, but I lose some of the already short surface when I'm not doing a 20 degree edge. Tried it out on my 52100 steel Manix today..I was impressed. It raised a burr pretty quick and did a very nice kind of toothy edge on the Manix very quick. It's got me thinking of buying the full size bench stone..like I really need more stones, lol.

Work sharp has a diamond bench stone but plates an a clamp are better,

Great video. Wish I knew that marking the finger trick when I started sharpening,would have made getting a hang of it a lot easier & faster.

It really does! And it can help with the last stone esp making sure your angle and bevel is perfectly flat, its great to use it through all the stones but it can be hard on the finger if you apply to much pressure

I’ve worn my Para 2 down to a straight blade. My wife has always said my grip and strength is unknown only to me.. I guess I’ve been using the diamond stones too hard 🤷🏼‍♂️. I’m going to try ceramics seeing as how they can take the pressure. Today however, I learned a lot by grinding the entire edge 90° I learned what I was doing wrong with my comfortable grinding motion, and I wasn’t getting the heel very well. My pressure on the heel was too light; I was putting too much pressure on the middle of the blade and not rotating the tip well, And.... I’ve also learned I’ve been using way too much pressure obviously 😅

Yeah pressure usually just leads to issues, and the diamonds cut pretty much just as fast as sometimes even faster with little pressure

Awesome vid, very relaxing and you kind of just sink into the sharpening, I almost feel asleep while watching. Do you keep the same angle on hollow and flat grinds? Or do you go with the angle from the factory?

I almost always change the angle unless its not a good idea, between flat and hollow i like to do around a 17° angle sometimes on flat grinds if their geometry is not good meaning they get super thick quick then i might not and just do 20° just because it might look ridiculous even though it would cut so much better

I really like your videos!!! Quick question, do you let your finger ride on the stone or just above it. It looks to me that you would sand down your fingertip over time.

You do if you put lots of pressure you barely let them tou ch almost floating, that way you know when you put pressure your changing angle, if your not touching then your lifting angle, but it does take some getting used to but you can swap between your middle and pointer not to make them to rough, or just use it as a starting point every time, that way you know your atleast starting off with the same angle every swipe

Really good video. Always like seeing you sharpen. Was that steel harder or easier to sharpen say versus M390? Know you were going fast to make the video in right around 20 minutes. How long would you have normally spent doing that steel??

On diamonds imo opinion most steels are about the same effort, maybe a few minutes longer or shorter, but the diamonds cut m390 just as easy as s35vn, but id say a bit faster than m390, imo it kind of felt like s30v or d2 as for sharpening

How do you like the spy27? I have this same knife and I like it. To me it seems like s30v on steroids. The only thing that passed me off about this knife was the clip. The clip was actually fine, I just didn't think it was tight enough. So I got a titanium lynch clip and swapped it. Once I got it on it wouldn't tighten down all the way. Now it just spins and spins, i can't back the screw out either.

You can add water it will make them last a lot longer, i use them dry and just wipe the dust off as i go

What do you do if you find some inclusions on the edge after you sharpen? The blade still cuts paper fine so do you worry about it or do something about it?

You dont have to but you probably wont get the best edge retention from fatigued steel, but id just use it until it needs another sharpening

Hey man I got a quick question for you, and if anyone else is reading and wants to chime in feel free! I’ve been sharpening my knives for a few months now and I’m looking into getting a better strop. Is there a specific strop and compound you would recommend?

I started with white and greem the kind that usually comes with strops, in the description i have a sample packet of diamond paste which i highly reccomend, diamond sprays are probably the best, and for compounds venev diamond compound is the best imo, but white stropping compound is really good that comes with many strops

Ive done videos showing how to hit the tip, one i think was marrying the edges and possibly a hard to hit areas or something, but you want too put your finger on the tip so that you can drive the tip into the stone
