Stoked you gave the coffee technicians some love in this video! Shad is such an amazing resource when it comes to coffee gear! I've been planning on sending you and Jared an email asking you guys to chat a little bit on the podcast about the role of coffee technicians at Cat and Cloud. As a long time specialty barista who also works as a technician, I would love to hear your thoughts on the future of technicians in specialty coffee since it is becoming more and more technologically advanced as far as the machines we use everyday. As usual, great video, Chris!

Do a podcast about your orientation! Would love to hear what you talk about besides bean to cup. Cafe culture? Do you get into coffee basics?

Those snippets of the processing / basic seed to cup are the only coffee we do in orientation. It takes up about 5 minutes of a 2 hr session. Our orientation is mostly mission, vision, values, and service delivery models. When people leave orientation the goal is to have them be familiar with who we are as a company and people and not so much coffee. If they understand the values it makes every other situation so much more simple to navigate.

We use our ABR in Brewratio mode, and then let it assume dose for all extractions except for espresso orders, then we weigh the portafilter. Works the same as mass mode until you decide to weigh.

That seems like a good best of both worlds type situation. That's similar to what we do with our current AV - all milk drinks get the programed button and all straight spros are weighed in and out manually.

Yo Baca!! I would love to see a follow up to this video. How is the machine working out? which modes are you using at the cafe? are you guys going to get more of these for the new cafes? any technical problems? Has it helped workflow? Thanks for being a inspiration to me and my small biz.

Auto Brew Ratio is the way to go. Grinders are just not consistent enough at this time. Our peaks will vary by .5g from shot to shot and not sometimes even 1g which sounds like very little but when you have an ABR machine you will see it makes a difference. So the ABR deals with that.

I really like the Verve build in downtown. It's super functional for everything and the baristas are like performers in that space. And WOW the Strada is ridiculous now, so many choices and what an incredible machine!!! Even a 2nd wave shop could make a decent cup of coffee with one of those...okay probably not.

So you don't have to weigh the portafilters before you dose anymore, since they save the weights? Also talk about brand ambassadors, Shad is the man! La Marzocco is killin it from all angles with great machines and great people.

Exactly. You put the empty portafilter on the scale, set the tare, it remembers it and since they all come in weight matched sets it's like butter. Even if you don't use the drip tray scales for ABR mode it's nice to have all pf's weight the same so you don't have to re-tare whatever other scale you use. La Marzocco is seriously amazing with the people they hire. IF I didn't have my own shop I think I would basically have to try my hardest to work there!

I went to one of the Linea ABR sessions last year - the ABR seemed a little too clunky (could have just been some teething issues that have since been refined). For me it seemed easier to have it extracting by weight, and then keep the same workflow for dosing grams in. Either way, it's great that companies like La Marzocco push them envelope with equipment like this - in time it will be further refined and it wont impact workflow as heavily. Separate conversation.. with ABR, I wonder how much of a difference you'll taste if the brew ratio is the same but the grams in and out are different, and how much room to move you'd realistically have before it has too big of an impact on what's in the cup. (for EG, if you had a whole extra gram in the basket, it would have a dramatic change to flow rate and as a result probably lead to over extraction in the cup?) You're the one who's getting the Strada ABR - would love to see another video down the track experimenting with it further, no doubt we will see something at some point. Keep Frothin'

Yeah I'll def do a wrap up. Honestly I feel like you only really have +/- .2 - .3 grams either way before the ABR is basically useless. Even with that the mass mode and the scales built into the drip tray are going to be clutch for us!

YO. Between AV and ABR for a new shop - do you find that you utilize the ABR programming in the day-to-day flow? The extra steps seem like they’d add a lot of time to the flow...

We use it in mass mode and that seems to be the jam. The ABR programing seemed like a bit too much for us as well BUT, even in mass mode it crushes the AV for consistency and accuracy. Flowmeters just can't keep up with scales.

Saving your your brew ratio to accommodate minor changes in dosing is genius! If that's rocking consistent results that's totally gonna speed up your workflow if your grinder is equally consistent. Why don't all machines have this?!! #newstandard? #if***inghopeso
