I have a micro bakery in Chicago and sell at local farmers markets usually in summer - they are so fun, I hope you get to do them soon. Very gratifying to have people pay me for something I love to do. Congratulations on your fridge. My baking rack was a game changer because it can hold 30 half sheet tins. So sorry about your reaction. Stay safe.

Sorry to hear about your health scare it must be really hard finding trustworthy restaurants, I'm sure your customers appreciate the effort you put in keeping food safe! If you ever expand to East London or setup a stall I'll definitely buy some baked goods!

Great respect for your goals and care of duty to your customers, it will pay off in bucket loads.I have been in and around the catering industry for far too long and it's a tough game. The more you are on top of the small details, H & S, FSA, word of mouth will roll through to your customers. High 5 to you!!!!! PS Love the fridge can't wait to see the new oven in operation.

Hi Lily... Thanks for sharing your latest video with us all and I was so pleased that your scare was sorted out... it must have been pretty worrying for all concerned. Fortunatey I dont have any alergies but you have just proved how easily things like this can happen and others supplying food need to be more careful.... just as you are because you are aware of these things because of your condition. Such a shame though as you could do without little setbacks like this as you are making such a dedicated effort to get your little buisiness up and running and you are certainly putting the work in and I admire you for that. Anyway Lily, Im pleased its turned out OK for you in the end. Wow... thats a. mighty big fridge and will certainly hold quite a few loaves... good to see it turned up in the end as that alongside your new oven, when you get it, will certainly help you be more productive. I can imagine you now working so hard filling it up. Bet you cant wait for your new oven arriving next as Im sure the new oven will also be very welcome to let you get baking all those loaves building up in the fridge :) Looking forward to your next update... take care Lily and best of luck :)

Thank you! Yes they are definitely an investment and a long wait at the moment I believe - depends how much use you hope to get out of it! Also worth looking into the Rackmaster RM2020 oven if you haven’t already :)

New fridge looks fantastic!! Love the glass door. And so sorry about your allergic reaction.🥺 My best friend is allergic to dairy products, eggs and many more too. That’s why i started vegan baking and sourdough bread. I think allergies eventually leads to an interest in cooking and baking. Anyways i’m looking forward new oven too!! I can see you’re growing up as a professional baker and also a youtuber!!👏❤️

So sorry you have to contend with severe allergies and very glad you are inspired to create safe products for others similarly afflicted. I'm diabetic and was wondering if you have or will be tapping into the very low carbohydrate market? Granted being in Arizona USA I'm just a bit out of range for your delivery service, but I'm sure diabetes is equally a problem in London. There is nothing better than a good quality piece of toast in the morning, something I and I'm sure many others have had to give up. Best wishes!

Just a pro advice you can get wired stainless steel racks to add cheep extra shelves in the fridge because commercial ones cost lots of money

So glad you are okay, a very scary incident. I really enjoy and appreciate your videos and the love and care you put into your baking. Would love to purchase your bread, but I live in the States. Would love to see a video on how to make a loaf of sourdough bread. It has been a hobby for me since the pandemic. Only on my third loaf. It took me a very long time to start an einkorn dry starter. Have you ever used einkorn flour? Again, thank you for sharing your micro-bakery journey :).

I was watching a video of a French bakery yesterday and was amazed they stack from the floor almost as high as a human, staggered baskets of proofing dough to save space. So instead of buying extra racks you could stack them on top of each other to not only save money but you could probably fit more baskets in the fridge that way. You might be able to take one or two racks out! Good luck with your business!

Love watching you follow your passion & grow your business. As I powered through all your videos, I noticed many of your followers are a little outside your bread delivery area 😂. You might think about adding some merch to your online store (apron, bread mit, bench scraper, bike jersey...). Maybe get your sister to do the fulfillment. 😎

Lovely channel! I’m so glad you’re feeling better after your allergic reaction. Congratulations on your new purchase!! I have a question about it. I am curious why you put the loaves in the fridge? I thought loaves had to rise in a warm place. Or are you doing something different by keeping them cold?

Sourdough artisan breads are cold proofed, they're allowed to have their final rise inside a fridge.

Up front ... I have no allergies or sensitivities ... BUT, I am wondering how you market your gluten-free products and/or keep gluten/gluten-free utensils, etc. separate. I.E. I would think that someone with celiac could not buy from you, but someone with a gluten sensitivity would be ok. is that where you are with your bakery? Do you tell all that the gluten-free products are made in a facility that makes gluten products? I am not challenging, I am wondering how you navigate this with your own personal understanding of the ramifications.

Thank you for your question! I state on my website that while I take every care to keep equipment and ingredients separate, I can't fully guarantee that there is no chance of cross contamination as I use gluten in my kitchen.

How low is your blood pressure? I also have low blood pressure, but it is because I have hashimoto's disease. Perhaps it might be helpful for you to have some blood work done to see what is going on. Have your thyroid etc checked.
