A good showcase of why using items are important to provide coverage (and how taunt can lead to satisfying punishment on enemies). I know this isn't saying much (given I haven't fully beaten the OG game myself, only up to the Fairy place), but I enjoy how they include more interactions with other humans. Feel more grounded and show the situations they're in.

I think Lilith's redesign is an improvement on the original. It arguably looks more demonic/sinister than the original design. Which helps, I guess.
