Hey guys, it's here and it's changed my life - it's my new Rackmaster RM2020 oven designed by Campbell MacFarlane. I am still learning everyday and tweaking my workflow but having so much fun getting to understand the machine better everyday. Every sensation, every mood of the chef is transmitted to the dish. The dish never lies: fun, passion and love are all basic ingredients in everything we eat good. Making bread is like cooking for the gods. Bread is the symbol of life. Bread creates very strong bonds between people and conveys a sense of inner peace. Lily, your bread is great. Wonderful! I hope you are charging extra for delivery. As my finance husband always says, “Time is money. You’re running a business, not a hobby!” I was glad you mentioned why you like your loaves dark. That was helpful, as I always like mine light, so thank you for explaining all you do. I learn a lot!

It’ll be nice watching the sequence from your daily baking, like starter feeding, scaling, mixing, resting, shaping and so on (with day time of course); I like to see how a baker organizes time :))

Its so inspiring see you so happy about the bread coming out the oven, its a wonderful experince this channel. I'm a baker too and the smell of the loaf when you open the doors... so simple and so enrichment. Can I offer a advice, for the take out the bread you can use a hard but thin wooden table for take out multiple loafs no simple one at the time

So awesome! These videos are great. I'd love to see more of how you mix and manage your dough. I'm just now starting to make larger batches and I still haven't quite figured out the best way to handle it.

You might be able to find some used Kitty trailers that are used for pulling kids. And you can customize them to your needs

Hey, Lily, congratulations on the new oven. Yeah, it's big. I don't know about in the UK, but here in the US, you can buy an Infra-red thermometer for about $15 (~11£). I bought one on Amazon and it works just fine.

Great video - try soaking the seeds in water overnight then apply to the loaves ...them this stops the seeds burning when baking.

Lovely! I soak them for a few hours for the mix within the dough but will coat the shaped dough in soaked seeds too! Thank you :)

Dear Lily Your proofing baskets are too large. Either buy smaller baskets or make bigger loaves. You can have better-looking loaves. Good luck.

Do not worry about the quality of the images, the important thing is what you tell and what you do. I'm glad you have a greater capacity for wounding. We will see how the RM2020 works

One of your biggest blessings is that of space - lovely big kitchen to operate in! Desperate to start a similar venture, but it’s a pipe dream for now as my kitchen is about a sixth of that size! Great to follow your journey though, so many valuable tips and insights.

Hi Lily, you could do a quick upgrade of your current bike basket situation by buying 2 of the Basil Memories Bottle Basket. These are great for shopping and for carrying things in general. I purchased a pair over a year ago and keep them on my bike constantly, using them for my daily shopping. I highly recommend them.

Have you tried scoring at 30 degree angle to get ear on loafs? Personally in find angle and depth very important for getting ear on baguettes and loafs. Thermoworks industrial IR Guns-S works very well for checking temperature on tiles/pizza stones etc.. I use mine to check pizza stone and square pizza stone tile temperature. I use thermoworks IR gun to check my pizza stone temperature on my Kamado’s and I use to double check the square pizza tiles (6 tiles per shelf) in my oven for baking baguettes and other types of bread that gets baked on the tiles.

It is true that the mechanical dials can somewhat be tricky. But even digital operated ovens can vary in quality. Some of them you cannot even trust the actual setting An IR thermometer can save you the hassle of guessing the stone temp and be confident in your bake Lovely loafs anyway, see ya ✌🏼

hey lily, first: thanks for taking us with you on your journey. it's nice to see the process with your micro bakery. one possible q&a question: how many hours of work do you put into how many loafs? and one "business"-idea: in germany there is at least one bakery that works by the principles of community-supported agriculture. which is basically that you have a set amount of customers that pay a regular sum to receive a regular amount of loafs. which ofc can be expanded in a way, that not everyone pays the same amount, but one manages to have a certain sum which covers the costs and your labour. anyways, looking forward to your next videos!

Hey Jokeb my pleasure! at the moment I am working from 6.30am until (most times on prep days) until 5pm or so; my day will include mixing, shaping my sourdough, mixing and shaping my gluten free loaves, as well as my sweet baked goods. The next day is my bake & delivery day :) That's a brilliant idea, I'll have to look into the community supported agriculture business plan as you mention, thank you!

Try cutting/scoring at 45 degree angle and you should have the desired “ear”. Nice videos!

Dear Lily! Try to find (or made with someone) a little steel container which you can use easily to make steam in that owen. It's much safer, and you can avoid to break that covers of the bulbs (with water spray). You just put in that container with some water before baking (during preheat) and after 10-15 minutes (when loaves rose enough big) you take out.

I'm so pleased its turning out so well for you. Just out of interest, how far do you cycle on your deliveries but appreciate its probably easier by bike than car if the roads are pretty busy in your area.... just curious. Still loving your growing commitment and seeing such a content young lady.... well done and Im already looking forward to your next video. I live up in the North East of England near Newcastle so unfortunately cant enjoy one of your loaf's but they look fantastic. Take care and have a great week :).

hey Glyn, I love the new oven; I chose not to buy a bigger rofco simply because the waiting list was so long (7 months +) and I really needed to increase my capacity as my orders are growing. I saw the RM2020 was launching soon and went for it!! Thank you for your kind words!

Thanks Melanie! It depends how many loaves I have... sometimes they go out warm if I have fewer to deliver as feel that's a lovely thing to receive from a customer POV, but at least 30 minutes as want it to cool a bit before anyone slices into it :)

Nice video. Oven looks powerfull but unfortunately too expensive so I stay with my OVEN B40 which I have tunned a bit changing the temperature sensors for profesional and digital ones which work 100%..

Lovely. My secret plan for retirement is to open up a bakery with wholemeal bread and lots of ancient grains. I might rewatch your videos then. Well I’m 24 so it will still be a few years from now :D Keep on going. Have you read „Show your work“ by Austin Kleon? It’s a short book with good inspiration for sharing your work and the process of it. And another tipp: as tempting as it might be... try not to look at the viewfinder all the time. You don’t have to do that. The shot looks amazing anyways. Greetings from Germany

Dear Lily, may I ask where did you get your wire shelf for your bread ? What is the dimension ? I am in the process of buying one and I don't want to buy the wrong size. Your shelf looks perfect. I love all your video and I have learned so much from you on how you shape and final shape your dough and I bought the exact kitchen island like yours from Ikea plus the bench scrapper. Thank you ! I would like to know the RackMaster stone thickness is 25mm or 1 inch? And is there a stone on top of the oven (4 stones in total) or only 3 stones one for each level? Thank you

Is it safe to spray in the oven with exposed coils? maybe worth checking with manufacturer

I think it’s fine to spray the lined parchment just have to be careful of the coils and light :)

mixed seeds - brown linseed, golden linseed, sesame seeds, buckwheat, sunflower seeds, hulled millet, pumpkin seeds :)

That swinging door is going to annoy. Have you checked the levels. Maybe have it very slightly raised at back so door stays open. Whoops, looks like you fixed it later on!!

it's a silicone sheet that came with the oven :)

The new Oven door swinging closed suggests the Oven isn't quite level. That hot door can give a nasty burn 😬

So, now that you've had the RM2020 for a while, I am wondering if you had to experiment with the baking time based on the number of loaves in the oven, or does that not matter much?

hello! Hmm so a full load (12-15 sourdough x 900g) takes 40-45 minutes in total but if you're baking a smaller load, you do have to compensate with extra steam as the bread will bake quicker... or you can just simply switch on one deck if you'd like to do 3-4 breads only. Hope that helps!

hello! Yes it's a home business and I started off by spreading the word with friends and family. Then for every new customer I received I would give them samples to give to their neighbours or friends to spread the word. I also regularly give my customers samples of new products to try and keep them up to date via my newsletter & little notes! :)

Is there a reason why you went for this oven over a combi steam controlled precise oven? Second hand rational ovens can be pretty cheap

I hadn't actually looked into rational ovens so don't know too much about them; I was aware of big deck ovens being used in the bigger bakeries but knew they were very expensive... so I was on the hunt for a bigger rofco stone oven but found the RM2020 and knew it was perfect for me and my loaves etc!

I think a lot of the rationals need three phase too, which isn't usually available in household kitchens. I just got an anova steam oven, it's great at bread but one loaf at a time, so not ideal for larger batches. It's nice to be able to just set a precise steam level from the phone app though. Isn't the inside of that door hot? It kept closing on you while you pulled loaves from the oven.

Oh I’m confused. First you said you gotta let the steam out for another 4 minutes but then proceeded to close the oven door. How is the steam going out then? 😄

because there's a little vent in the top of the oven which continues to let out the steam!

You may need to invest in a VW caddy over the car, you may get really big once you get that oven at full capacity

Could you not just stick the tip of the steamer.. Water pump in the vent hole of the oven ...inject the water and close vent hole?
