Nick uses two different accounts, one that's set to the GM and one that's set as a player simply for demonstration purposes in his videos; he just means that he's showing what a player would see through their token when he says that. However, if you want to look through a token's eyes as a GM to see what they see, ctrl+L lets you see through their eyes, allowing you to make sure that their token is set up for vision properly and whatnot.

One thing i always have a question about, i've seen some maps that the black areas/fogs, even on dynamic lightning, isn't so black. Is like a shadow. The player sees the area that isn't discovered, but all grey/black, instead of a blackout.
